Postscript is a hop-tinged country beer brewed with a generous portion of raw spelt sourced from our neighbors. We ferment with a mixed culture and ripen it in oak casks, resulting in a mature beer that balances fermentation character with judicious hopping.

cloudy golden white color. Frothy white head. Oak, a touch of spelt, wheat, barnyardy nose with nice Belgian funk and medium hoppiness. Light body, slightly tart, dry, funky and refreshing. . Brilliant balance. Amazing

Light, fruity, a bit tart. Oat and spelt come through creamy, citrus, florals, candy green apple. Smooth and soft, but not lacking in flavor. Surprisingly good.

Damn fantastic flavor again from Suarez. Thanks G C. ! The lemon apple is damn near a 3F OG, just needs extra barn animal funk/nose. Lil tart, lots of delish crisp fruity hop funk.

750 ml bottle from the brewery, 8/20/21 (bottle Dated 9/20). Unclear golden pour, white head. Continues to fizz in the glass well after being poured. Pepper, funk, wood, and a million other things. So much farmhouse goodness here. Zesty lemon. A good bit of grains and grass as well. Nicely tart. So much flavor, so much going on, but in a perfectly delicate manner. Complex, but not at all pretentious. Excellent stuff.

Bottle thanks to Brian. Pours a hazy yellow gold with medium white head that lasts. The aroma is floral, lemon zest, chamomile tea, wheat. Thin body, mineral, oak, funk, lemon zest, chamomile, light dry finish, very nice.

Bottle at home in Hackney - picked up via trade. Pours mostly clear yellow-gold with a foamy, pure white head. Beautiful beer, lightly sweet, with clean lemony tartness, some oaky dryness, restrained funk, nips of grass and straw, salt. Light bodied with massaging carbonation. Tart, quenching finish, with subtle acidity, nips of citric bite, engaging funky notes. Lovely.
