This beer taught us that patience truly is a virtue. KBS is a big imperial stout brewed with a massive amount of coffee and chocolate and then bourbon barrel-aged to perfection. Incredibly silky and full-bodied with notes of vanilla, cocoa, roasted coffee and charred oak.

12 oz. 2011 bottle. $6.50 @Binny’s. Sorry, folks. I got the last one there. Opens and pours with a sensuous smell of chocolate, French roast coffee, and an old, empty bourbon barrel. Even some molasses cookies. Color is what else but black, with a deeply tan head of foam. Taste is complex swirl of chocolate, bourbon, coffee. I think some Cascade and Centennial, but in the main, mostly bittering hops. Sometimes, I think there’s some roast barley bitterness, other times I’m not so sure. But always, a sweet, sticky malt is left behind after other flavors have departed. So now I’ve enjoyed a lovely fresh KBS and can keep my 2006 bottle in the cellar, screwtop cap and all.
