Brewed in collaboration with Oxbow, exclusively for release at Witchstock 2019, Saison Pizazz is a simple, classic-ish expression of the style. We utilized Saison Maison yeast (a non-diastatic isolate) from Escarpment Labs, and minimal dry-hopping to create a highly drinkable, highly crisp highly carbonated (in the can) saison.

(473ml can from the Hafis Rd brewery) Pours a clear bright gold with a small white head and no lace. Aroma dominated by the yeast character as expected, pretty fresh and largely ester-driven with citrus and tree fruit, a touch of gum, fresh flowers and herbs, light but slightly sulphurous wet funk, dry cereals. Flavour is crisp and very dry, yeast dominates and less fruity than the nose, citrus zest and fruit skins, some cereals, white pepper, dry leaves, stony soil, finishing bone dry with a light pepper and herb bitterness. Lightish body, average carbonation, not as mousse-like as normal bottle conditioning though. Nice rendering of a classic style, well-made though with no bells and whistles. I feel like I should have had this with food as I enjoyed it but it didn't excite me.

Can: Poured a clear golden color ale with a large pure white foamy head with good retention and some lacing. Aroma of light rustic malt with some nice floral ester and light residual sugar is very enticing. Taste is also a very nice mix of light rustic malt with some nice floral ester with faint residual sugar notes. Body is about average with good carbonation. Highly drinkable saison with right amount of complexity.

Canette 473ml, gracieuseté de msjpearson, Thanks Mike! Couleur jaune paille translucide, mousse blanche aérée. Arôme de levure, houblon herbacé, citronné. Goût de levure, céréales, amertume moyenne toute en longueur, légèrement poivré, houblon herbacé. Carbonatation moyenne-élevée, corps moyen.

Funky lemon skins. Cloudy gold with a decent white head. Peppery lemon peel and a nice finish. Solid, old school, but better than DuPont?

There's a bit of yeastiness on the nose, some herbal hop notes. Touch of nice pale malts. Seems a touch light on the body, and lacks bitterness so the balance isn't quite right, but it's not a bad beer.

500mL bottle, pours a cloudy dull yellowish blonde with a small white head. Aroma brings out lots of rustic saison yeast, with a touch of funk, and crisp biscuity malt. Flavour is rustic and cerealy, with straw, rustic saison yeast, a hint of wild funk, and crisp biscuity malt. Rustic and cerealy finish, with a touch of funk. Very good.

(can) clear, bright yellow colour with a tall, quickly disappearing white head; aroma of flowers, spice; dryish flavour with a long, light bitter finish
