Our buds at Brew Culture offered us a unique collaboration opportunity: we could pick the brains of the fermentation geniuses at White Labs and they would put together a bespoke culture of brewers yeast, brettanomyces, and lactic-acid bacteria to ferment the farmhouse ale of our dreams.

This beer has been tank-aged for three months, dry-hopped, and then bottle-conditioned and bottle-aged until we were satisfied. A herbal hop aroma overlays a complex, fruity brett character, leading to a lightly tart finish.

Generic funk. Murky gold with a decent white head. Funky, bright and quite clean. Solid.

Bottle at Farmhouse Fest 2019, pours a cloudy golden with a small white head. Aroma brings out wild yeast, with some oak and saison yeast. Flavour is along the same lines, with wild yeast, oak and some rustic saison yeast. Not overly complex but it's decent.

On tap. Pours a hazy dull amber with moderate head. Aromas of candied lemons, a bit of Belgian yeast and wheaty malts. Flavors of same. A little fruity. Pleasant. But isn’t a collab with a yeast lab just a use of their yeast?

Taster. Appearance: a bit dirty pale golden with a white head. Aroma: fruity with some Belgian Saison notes on the background. Taste: bread notes, a bit sour, fruity. Overall: nice one.

Cloudy yellow, medium head. Nice aroma, touch of brett, florals, mellow spicy hops in there as well. Clean pale malt lends structure to the brett, the dried flowers, and the light stone fruit and gooseberry. It finishes a touch thin, but this is a really nice, beautifully balanced beer.

Draught at the brewery
Cloudy blond colour with small head, not persistent. Nice aroma, earthy, manure, then some citrus peel. Good body strength, there is some residual sugar; the carbonation is a bit soft, which gives some oily mouthfeel; the flavour is gently spicy and funky, and there is a delicate note from the dry-hopping.
