Filtered through the roots and vascular tissues of Birch trees, each Spring living sap-water seeps out of tapped trunks as an elixir of life—long harvested as a tonic beverage of northern climes. Raw honey from Mcfarline Apiaries of Benson, VT was dissolved into raw birch water and left to ferment with whole clusters of foraged sumac berries. Bottled in the traditional method, honey was added a second time to create a sparkling dry wine with earthy notes and a robust acidity.

Bottle, 500 ml, shared with Luka and Miro B. Pale gold with almost no head. Honey , some tartness, sweetish, light citrusy notes, bit empty in finish.

750mL bottle, drunk at FOAM on 8/13/22. Soft-toned, hazy oyster liquor. Salinity, mineral, lacto-malic notes and light honey with tart sumac and earthiness. Floral, light yet deep with light barrel character and rustic grain. Tart sumac with malo-lactic acidity leading to juicy, soft honey and lingering oak tannin and vanilla. Not much bitterness from dandelion and a very light dusting of fruity apple skin. Complex, to say the least.

Smells like a Birch tree, whatever that smells like, sparkling lightness after.

Bottle at Brian's
Cloudy pale blond colour. The aroma is very nice, funky, pungent, citrusy. Off-dry and weak mouthfeel; tart, lemony; besides that there is not much.
Grossly overpriced, but it's not a bad drink.

Light sweet white fruit and herbal notes. Pale gold with no head. Light tartness up front, touch of wood and herbal notes and an acidic finish. Different.

Sort of a greyish colour, touch of haze. On the nose, there's a fair bit of the clover honey on the nose. On the palate, it's tart, just a touch of clover honey character, a distinctive birch character in the finish, along with a touch of honey again.

500mL bottle, pours a hazy clear pale blonde, no head. Aroma is unusual, with fermented out honey, tree sap, and a touch of clove. Flavour is very dry and rather spicy, with totally fermented out honey, earthy spice, and a champagne-like effervescence. Spicy, carbonated on the palate, with an acidic finish. It's cerrianlt an unorthodox mead. Not really my style, but it's alright.
