There are two schools of thought when it comes to oyster stouts - some believe that they should be served cold and go well with a plate of oysters. We believe that a proper oyster stout should be made with oysters. We’ve used six different grains, including oats, wheat and roasted barley, and Fuggles hops for that traditional stout character. We’ve then added whole oysters, shells and all, during the last fifteen minutes of the boil. The result is a smooth chocolatey stout that leaves you wanting more.

Bottle @ benzai. Dark brown to black colour with a medium sized beige to lightbrown head. Smells earth, ash, coal, roasty. Tastes sweetish, hint of liquorice, roasty, slightly earthy. Thin to medium body, nice crisp carbo.

Bottle @ home shared with Dutchdrebus and Ansjelaah. Opaque black color, full sized quickly diminishing brown head. Aroma is malts, lightly roasted malts, lightly earthy. Taste is about the same with malts, roasted malts, lightly caramel, a bit earthy, decently bitter, a hint of toffee. Medium body and carbonation. Good stout.

Cask @ The Fox, Dalston. Pours black with beige head. Presents a decent body with smooth coffee, dark chocolate, some grains, roasted malts.. lots of flavour and very enjoyable.

Bottle from Cotteridge Wines; dark brown pour with big fluffy tan head, smooth chocolate aroma, taste has rich chocolate, with roast coffee, liquorice, a hint of smoke, velvety mouthfeel, very good.

Cask @ Euston Tap, Euston NW1. Pours a black color with a small tan head. Has a roasted malty chocolate aroma. Roasted malty chocolate flavor. Has a roasted malty weak salty chocolate finish.

Tap at Friends of Ham, Leeds. Mahogany colour. No head. Aroma is roasted coffee. Chocolate raisins. Taste is bitter, but not burnt. Nice dry finish.

Very dark brown, thin white head, no lacing
Aroma - Burnt roasted malts, some espresso coffee, not getting the oyster
Taste - Dark plain chocolate malts, soft roast malts, slight burnt notes, no oyster again, very nice
Palate - Soft carb, medium body. Finish as main flavour, bit dry.
Overall - Good solid stout although prefer these beers on cask or bottle

Cask at the Hanging Bat. Looks the part, good dark brown to black pour with a tight tan head. Aromas of chocolate and mild coffee. More of that on the taste, alongside a slightly saline or metallic quality. A bit thin on the finish. Good, but not great.

Cask at the Euston Tap, 03/04/13. Mid black with a tight cap of tan bubbles that retained until half drunk. Nose is roast malt, chocolate, touch of cardboard, light salt. Taste comprises roast malt, dark fruits, salted caramel chocolate, molasses, faded leather - Huggy Bears jacketee! Medium bodied, fine carbonation, dry finish. Decent.

(Cask at Gallows Bird Real Ale Festival ’13) The beer poured almost black. Its head was small and lightly brown. Aroma had roasted malts and chocolate. Palate was light bodied with low carbonation. Flavours were roasted malts, burnt malts, sea water, sweetness and bitterness. Aftertaste was roasty and bitter. The aroma was very good but the taste was too burnt.
