Quebec’s Brasserie Dunham and Dageraad are kindred spirits in many ways. We both love making exotic beers with a lot of fermentation character, but Dunham tends to use way more hops. In everything. We got together and brewed this beer with Dageraad’s house yeast, two strains of brettanomyces and loads of hops in the kettle, and a big pile of Eldorado, Idaho 7, Citra, and Hallertau Tradition in the fermentor.

A hazed blonde ipa with a thick frothy lacing white head. In aroma, sweet fruity lemony malt with resinous floral hops, grapefruit pulp, light Brett, very nice. In mouth, a nice sweet fruity banana malt with cloves, Brett, resinous and piney hops, very nice.

Cloudy, dull tan, with a big giant head. All manner of bright brett and citrusy hops. Bitter, pithy citrusy, all kinds of brett. Light yeasty notes. A bit too yeasty but really good.

2019-01-31, draught at the brewery, 7-4-8-4-16=39
Cloudy blond colour with compact head. Earthy aroma, some manure. The mouthfeel is very astringent, a bit fruity, but also woody and with vegetable bitterness, the Brett really dominates.
Rough but very good.

2018-11-26, draught at the brewery, 6-3-6-3-12=30
Cloudy blond colour. Some manure aroma, light funk. Highly carbonated, hence smooth, fairly dry; tiny bit of malt base, quite strong yeast character (a bit spicy, mildly funky, more vegetables than desired), and astringent in the final, with some pithy bitterness.
Brett IPA indeed, one where the sum is less than the parts. Ok beer overall.

Taster at Dageraad Brewery. Pours a hazy blonde with a white head. Aroma is very funky with some cheese notes, a bit dirty. Similar taste with some not pleasant dirty notes. Not very good.

On tap at Dageraad, pours a cloudy golden blonde with a medium white head. Aroma brings out a lovely rustic saison yeast upfront, with fragrant floral dry hopping and crisp crackery malt base - that yeast is so rustic and lively. Flavour is very complex, with an exquisite rustic saison yeast character upfront, accentuated beautifully by the hops, and packing a rather lively funky wild yeast character. Beautiful harmony and quite elegant. Excellent.

Bottle - Funky and fruity brett notes. Cloudy gold with a very active head. Bretty and fruity notes. Lots of nice funk.

On tap at the brewery. Aroma is soft brett yeast and hops. Has an okay yellow body, minimal head. Flavour is very strong hops with more yeast. Medium finish. Not bad, not great, adequate for the style.
