Val d’Or draws inspiration from a beer we admire and marvel at; Orval. The word Val d’Or is a reference to the source of the name of the Orval Abbey where Orval is brewed. Following that vein we focused on creating a beer with firm herbal bitterness, a depth of dry malt character, and complex Brettanomyces expression. Our intention with this beer was in part to create complexity through process and time, and keep the ingredients limited.

Val d’Or was brewed with 100% @meccagrade Varona malt, and well hopped in the kettle with Saaz and East Kent Goldings. It was fermented dry with a blend of Saccharomyces along side three of our favourite Brettanomyces strains. After spending three months in freshly emptied B.C. Chardonnay barrels, the beer was lightly dry-hopped in the barrel with East Kent Goldings before being refermented in the bottle with Brettanomyces.

The beer was released on Saturday November 25, 2017. This beer was only available to go through the Twin Sails tasting room. 10$ per bottle, 1 case per person limit. A small amount of keg conditioned Foreword was on draft for the release as well as a limited amount of Val d’Or bottles for in house consumption.

Poured from 500mL bottle @ Black Valentines. Dry, subdued brett and funk, oak, hint of astringency. Seems past it’s prime.

Bottle: Poured a clear golden color ale with a large white foamy head with excellent retention and some good amount of lacing. Aroma of dry floral hoppy notes with some light tart and funky notes. Taste is a mix of tart and funky notes with some nice dry flora Saaz hops notes which are will paired with the Brett yeasty notes. Body is about average with good carbonation. Similar to Orval but maybe lacking a little bit of attenuation but great beer nonetheless.

Cloudy golden-amber color, generous head, the bottle was slowly gushing. Very nice aroma, very funky, the Brett is very evident. The mouthfeel is extremely dry, the Brett is somehow present, less than in the aroma, it has an interesting gentle fruity character; the final is mildly astringent but also too weak.
Good, not very complex.

500ml bottle at Alex's. Pours a hazy golden with a white head. Aroma is pleasant with some oak and bretts. Similar taste. A bit smoky aftertaste. Good one, especially for its price of $10 at the brewery.

Bottle - Funk, some rind and white grape. Clearish gold with rich frothy white head. Sour and funky with a nice yeasty fruity funk and a bone dry finish. Nice and funky.

Cloudy, light amber. Thin head. The brett and herbal golding notes come through in the nose quite a bit. Maybe a touch of gooseberry in there as well. Touch yeasty. Appetizing. There's a dry herbal hop note, brett, some sacc...The frutiiness is nice. Woody, vinous notes. Really nice complexity here. Pays nice hommage.

500mL bottle, pours a cloudy orange with a large white head. Aroma reveals the brett upfront, followed by chardonnay barrels, and a touch of woody oak. Flavour is moderately complex, with nice expression of oak, wild yeast from the brett, and light vinous character. Funky critters and oak on the finish. This is really well done.
