La Big Mama est un stout de 6,2% alc. Les malts utilisés lors de son brassage lui confèrent sa couleur noire intense et de délicieux arômes de café et de chocolat. En bouche, elle développe une douceur maltée balancée par une amertume délicate.
Bière au goût évolutif, elle se bonifiera au cours de la première année
de garde en cave. Elle accompagnera à merveille un moelleux au
chocolat et coeur de fruits rouges.

Hazy very dark brown with a light brown head. Aroma is sweet, roasted malt, chocolate and fruity. Flavor is quite sweet and moderate bitter. Sweet finish. Mellow. 280112

Bottle. Very dark brown/red with medium light brown head. Aroma is roasted malts, chocolate and fruit. Flavour is roasted malts, chocolate, liquorice, little coffee, medium sweet, hops and a little bitter.

Very dark brown to black beer, big beige aery head, unstable, adhesive. Aroma: very fruity, sweet peaches, raisins, dried fruits, caramel, mocha, bit of band-aid. MF: ok carbon, light to medium body. Taste: bit sour, citrus, red currants, some caramel, hop bitterness. Aftertaste: mocha, little sweet, caramel, coffee bitter, tobacco, hop bitter.

Light, but continuous gushing to huge dark-beige head, stable over deep brown to black beer. Yeast all in suspension. Roasted, woody, slightly meaty notes, roasted nuts, sweetish, but rounded-off by aromatic, fruity hops. Fruity hops return in the mouth, with aromatic notes of citrus and peach. Bit sweet initially, but gradually the roasted bitterness mounts, culminating in an outspoken dry-roasted finish. Medium bodied at best, grist-filled, dry aftertaste. Decent, well-hopped stout.

75cl bottle @ 7th Arch’en Bières 2011, thanks Manu for the share. A nice Belgian stout with an American twist, memories of Manu’s time living in DC. Couleur noir, mousse épaisse moka. Arôme est subtile et retient un profile belge tout en mariant les notes américaines d’un malt chocolat, grillé et torréfié qui laisse s’échapper un peu d’amertume. En bouche, bière au profile malt prononcé, donc le mélange de différents malts allant d’un chocolat noir amer (qui reste léger) a de belles notes grillées et torréfiées. En arrière-goût, une pointe de café et un peu de réglisse. Palais est sec et poudreux allant sur une note de feuille de tabac le tout conservant une approche belge de par la levure. Une stout qui mérite ce score et qui reste dans le style, légère mais pleine de saveurs, qui allie à la fois un savoir belge tout en ayant un petit clin d’œil aux US. Un régal surtout à 6.24%
