Spiced biere de garde formulated to pair with Bols Genever, the famous Dutch spirit. Made using many of the same grains- barley, wheat,rye, corn plus a slew of spices: ginger, aniseed, angelica, licorice, juniper and clove. Hugely aromatic and flavorful brew that holds up deliciously against the Genever. Kopstootje is a beer we've done draft only on occasion since 2011, beginning as a collaboration project with Jacob Grier. He approached us with the idea of producing a beer formulated to pair with the Dutch national spirit, genever, and we put together a unique recipe starting with a biere de garde but incorporating many grains and spices commonly found in genever. This release is the first time the beer has been bottled, but it also differs from previous batches in that it's aged entirely in local vermouth barrels, lending a wonderful floral aroma while oak tannin and light fruit notes of rose and strawberry land on the palate. The spices in the beer have softened over the aging process, making for an elegant profile that still shows an edge with pleasant acidity and a very dry finish.

Bottle shared by ClarkVV--Thanks Clark! Hazy, light brown, ring of head, light lacing. Aroma is strong corn, juniper, host of spices. Taste is strongly tart (not sour, but gets you in the back of the mouth) fruit, w/sweet berry, spices. Smooth texture, somewhat watery, soft carbonation and finish as taste. Not a style I gravitate to but more tart than sour and a lot going on! Well made for sure.

375mL bottle drunk 11/2/25.
Clear, rosy orange. Bronze and with an off-white head.
Sacch yeast rising up to outdo the spicing. Barrel aging gives a good evenness of aroma. Soft, honey-like malts help balance.
Soft and malty with light spicing in the finish. Bit of ginger acidity and juniper character. Soft and malty with mild Belgian yeast. Lingering bitter herb such as Angelica or similar.

Bottle. Color: Slightly hazy orange amber, thin off-white head. Aroma: Herbal, fruity, funky. Taste: Moderate tart, fruity notes of grapes and grapeskin, malty, rye, subtle herbal / spicy. Floral / botanical and boozy hints. Light to moderate sweetness and light bitterness. Some wild yeast funk and wood. Quite dry mouthfeel. Quite complex. Nice one.

Hazy golden colour. Nice aroma, Brett, but of grapes. Mild acidity, moderate Brett character, mild red grapes skins, and light spices (garam masala, maybe cumin).
Unexpected, but good.

Taster shared at Alex's. Appearence: a bit hazy golden with a white head. Aroma: fruity, fermented veggies notes, somewhat sweet. Taste: pretty similar with some strange spices notes. Overall: aroma is nice, but taste is really weird.

Hierdie bier hat gekak up my tong. Poured hazy amber with thin head. Herb aroma, smelled like a savage. Burned my tongue with it's herbs and spices. Vomitous finish. I will not drink this.

Hazy amber, big thick head, has a really nice nose, lots of pepper, ham on the nose. On the palate, has a big malt, touch of wood, almost a BdG character. Dry finish shows a touch of alcohol.

Draft - Funk and spice with some pepper notes. Cloudy copper gold with a decent white head. Light pepper notes and a touch of bitterness.

On tap at Upright, pours a hazy golden with a small white head. Aroma of light spices, herbal and farmhouse notes. Flavour of slightly salty notes, some spices, and some restrained farmhouse notes. Pretty light-bodied and lightly salty. Decent stuff, though not a whole lot of character to it.
