Bottle shared in Hudson. Pours mostly clear yellow with a slight, foamy white head. Lightly sweet, big apple character, light musty cellar, subtly bitter apple skins, mild acidity. Light bodied with delicate, massaging carbonation. Pretty clean finish, more lightly juicy apple. Sound.

Draught at Covenhoven: pours pale yellow with white head. Aroma is apple and pears, plenty of funk. Taste issomewhat sour, a bit cidery, nice finish, not acidic, good.

375mL bottled May 10, 2020, drunk Oct 28, 2021. Pale, straw/white-golden with little/no head. Great clarity leaving sediment behind. Dusty, peppery, herbal and lightly tart apple and barnyard notes. Very delicate and doesn't beat you over the head with bacterial/yeast acidity. Soft and malty in the mouth, with green apple undertones but no heavy tannin, which I generally think impedes these apple sours. Wheat and very slight touches of honey from the malt balance the easygoing tartness, with light apple sugar, no barrel character and no flaw or alcohol. No acetic notes and only light lactic acidity. Absolutely stunning and really impressive to have it come across this delicate. Still, even at 4.9%, this could have just a bit more flavor/body/complexity.

Light sulphur, touch of glue and skins. Pale yellow with almost no head. Light apple and a clean finish.
