Soak: our line of sour wheat ales, aged in oak, featuring a variety of single fruit additions. We place a base brew crafted with 60% wheat grist in 600L oak puncheons for 3 months with fermentation duties shared gracefully between lactobacillus and our Native New England mixed culture. Loosely inspired by the cold-maceration process used in winemaking, we blend fruit directly into the barrels to “soak” for enhanced extraction of unique colors, aromatics, and flavors. Delightfully acidic, but not funky, our Soak series is an approachable sequence of wild offerings that we are proud to share.

Black Currants bring a slightly hazy ruby red hue and a pleasantly tart and deep profile of dark mixed berry compote, underpinned by a light tannic structure. Black Currant Soak is dry with undertones of oak and wheat accentuated by an effervescent carbonation for a crisp, quenching finish.

330 ml bottle, Cardinal Pub & Bar, Stavanger. ABV is 6.3%. Hazy deep red to purple colour, small pink head. Intense aroma of blackcurrants and oak, hints of yoghurt. Intensely sour flavour of lemons and blackcurrants, hints of oak. Not a beer for me.

Huge, ultra dense & fine rosy head over deep red, veiled beer; end of bottle dense deposit. Powerful berries' nose, fruitacids and various vinous and woody touches. Blackcurrant dessert pie. Really sour fruity flavour, real fruit, lactic acid, fruitacids. Ultra dry and vinous character. Acidthinning, mild acidburn, very well carbonated and utterly tart. Vinous. more than cassis. Severe, and in fact lacking a tad of complexity in its class.

Bottle, 7/June/2018, from Goblet. Murky red body, pinkish head. Misty red body, pinkish thick white head. Gluey, funky blackcurrant aroma, not entirely pleasing to my tastes really at times, but with a little bit of breathing it got highly pleasant, cleaner fruitiness, soft funk, dry maltiness, honey. Lean taste, sweetish, okay, subdued but tasty blackcurrant profile, tart, salty. Very good stuff, very good indeed.

0.33 l bottle from Goblet Beer Store, shared with Marko and Ogi. Hazy dark amber to ruby red, small pinkish head. Fruity, dark berries, black currant or blueberry juice, a touch of oak. Moderate sourness. Fresh black currant, jam. Also prunes and blueberry. Wonderful although one-sided fruit profile. Nice sour berries in the finish. Drinkable. Soft, juicy, smooth.
