Soak: our line of sour wheat ales, aged in oak, featuring a variety of single fruit additions. We place a base brew crafted with 60% wheat grist in 600L oak puncheons for 3 months with fermentation duties shared gracefully between lactobacillus and our Native New England mixed culture. Loosely inspired by the cold-maceration process used in winemaking, we blend fruit directly into the barrels to “soak” for enhanced extraction of unique colors, aromatics, and flavors. Delightfully acidic, but not funky, our Soak series is an approachable sequence of wild offerings that we are proud to share.

Black Currants bring a slightly hazy ruby red hue and a pleasantly tart and deep profile of dark mixed berry compote, underpinned by a light tannic structure. Black Currant Soak is dry with undertones of oak and wheat accentuated by an effervescent carbonation for a crisp, quenching finish.

Bottle shared at Lucky Bamboo share. Pours a clearish ruby with a small off-white to pink head that dissipates. Lovely blackcurrant forward nose with oak, wet hay, must and gooseberry notes as it warms. More oak on the palate with light vanilla, dried blackcurrant. Good tartness, dry again and light bodied. Lingering mineral, hay and fruit on the finish.

Bottle. Pours a cloudy purple with small pinkish white head. The aroma is strong oak, currant, funk. Slick body, funky, currants, berry, nice tartness, very good.

Hazy burgundy cranberry. Huge blood pink head. Good retention.
 Brett, oak, currant, even biscuit in the nose. Mineral and that juicy gooseberry jam like character seen from apricot soak.Wow nice.  Such a strong series.
Brett really makes this beer, adding soft mineral and fruit with light funk and jelly-like flavors to the otherwise tart, tannic, poignant, potentially austere currant. Just enough texture still preserving the levity of the beer and adding light cereal and biscuit. Tight carbonation and strong attenuation. No alcohol or flaw. Tart currant is so juicy and flavorful with pepper and more tannin lingering.

Many thanks! Sampled 330 ml. bottle. Bright blackcurrant juice, small pink head. Fizzy blackcurrant lemonade acidic, puckering lemon, quite simple but fair.

Bottle during share; slightly hazed purple pour with a bubbly light pink head, aroma has raspberry, almond, taste has fresh raspberry, white grape, quite tart, some vanilla.

Pours bright magenta into a tulip. Pink head with little retention recedes to mottle surface. Grape and funk aromas. Soft with tart grape and summer berries upfront turning dry in the lasting funk finish.
