We may have sampled a Mai Tai or two.
He more than I, for they are indeed Far too sweet for me.
Months later we were getting ready to brew Losing our Ledges (hoppy hazy sour IPA)Let’s do another cocktail inspired deconstruct, says BrianDude, like what? says IDude, Mai Tai. His eyes light up
And on that, we had an accord.
So… I hope you enjoy our little Mai Tai deconstruct.
ALE brewed with Almonds, sugar, honey with ORANGE peel, pineapple juice and lime juice added

04/24/20 Bottle from Wolf Brew in NC around the start of the new year. Short goblets at home. Quick-hitting, thin, dirty white head. Dirty, translucent, bubbly, dark red/brown body. Smells like a macerated sour brown ale. Nothing much identifying the extra ingredients. Taste is a sour brown with lots of lime zest & a twinge of pineapple juice. Vinegary & Jolly Pumpkin appropriately sour. First hit is well carbonated, turning to just a slight but constant fizz. Yeasty, but runny texture, alcohol is fine. Wanted more mai tai. A little messy as a basic sour. Expensive.

Draft. A hazy amber beer with a thin beige head. The aroma has notes of brett, wood, funk, and berries. The flavor is sweet with notes of brett, straw, berries, wood, and funk, leading to a tart finish.

Amber colour, with some haze, and a medium head. Fruity nose but kind of vague. A bit harsh and husky, too bitter. There’s a touch of sweetness from the pineapple that cuts in there, but it’s still an unbalanced, messy beer.

On tap at the Alibi Room, pours a cloudy dark copper amber with a small beige head. Aroma is very odd, with cardboard, pineapple and orange rind - weird. Flavour is pure cardboard, with subdued orange rind, lemon, and a hint of pineapple. Oaky, cardboardy finish. This is either past its prime or just way off the mark. Either way, bad.
02/01/2018 Real chunky boi. Tastes like a red ale + a pineapple sour. Interesante.

750 ml bottle into tulip glass, bottled on 2/1/2018. Pours slightly hazy/cloudy deep golden/amber/light orange color with a 1-2 finger fairly dense and fluffy off white head with great retention, that reduces to a small cap that lingers. Nice spotty foamy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big juicy/tart/tangy pineapples, lemon, lime, fruit skin, orange, grapefruit, citrus peel, peach, pear, mango, melon, red/green apple, white grape/wine, peppercorn, almond, coconut, oak, hay, straw, herbal, floral, grass, honey, brown sugar, and toasted bread; with light notes of oaken vanilla, leathery/musty funk, white wine vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy yeast, fruit, honey, sugars, oak barrel, bready malts, and light-moderate earthy hop notes; with great strength. Taste of big juicy/tart/tangy pineapples, lemon, lime, fruit skin, orange, grapefruit, citrus peel, peach, pear, mango, melon, red/green apple, white grape/wine, peppercorn, almond, coconut, oak, hay, straw, herbal, floral, grass, honey, brown sugar, and toasted bread; with light notes of oaken vanilla, leathery/musty funk, white wine vinegar, and yeast/oak earthiness. Light-moderate fruity/lactic tang/tartness; pine, herbal, floral, grassy, citrus peel bitterness; and yeast/oak tannin spiciness on the finish. Lingering notes of tart/tangy pineapples, lemon, lime, fruit skin, orange, grapefruit, citrus peel, peach, pear, mango, melon, red/green apple, white grape/wine, peppercorn, almond, coconut, oak, hay, straw, herbal, floral, grass, honey, brown sugar, toasted bread, light leather/funk/vinegar, and yeast/oak earthiness on the the finish for a good bit. Great complexity, robustness, and balance of fruity/funky/spicy yeast, fruit, honey, sugars, oak barrel, bready malts, and light-moderate earthy hop flavors; with a great malt, bitter, spicy, tart, tangy fruit balance; and no puckering/astringent flavors after the finish. Light-moderate increasing dryness from lingering bitter/spiciness, tart/tangy fruit, and carbonation. Medium-plus carbonation and medium body; with a very smooth, moderately creamy/bready/grainy, and fairly crisp/acidic/tangy/tannic balanced mouthfeel that is great. Minimal warming alcohol for 7.7%. Overall this is an excellent fruited sour/wild ale. All around great complexity, robustness, and balance of fruity/funky/spicy yeast, fruit, honey, sugars, oak barrel, bready malts, and light-moderate earthy hop flavors; very smooth, easy, and fairly crisp to drink; with the modestly acidic/tangy/tannic/drying finish. Not overly lactic. Really unique beer, but they still nailed it. Tastes like a Mai Tai as a wild ale. Awesome balance of classic JP house funky Brett/Bacteria complexity, pineapple, lime, almonds, citrus peel, honey, and sugars; nice oak barrel presence, earthy hops, and bready malts against acidity. A very enjoyable offering, and well made experimental style example as expected.
