A mixed-culture fermentation in open copper vats is followed by months of aging. Similar in approach to the classic “solera method” of blending liquids of varying ages, master blenders regularly mix new batches with older ones to achieve the perfect balance of sweet and sour.
Solera is the new name for Pale Sour. Same delicious beer, now in adventure-ready cans.

As Liefmans Pale Sour @Brouwerij De Koninck. Fruity nose, pale golden colour, mild sour aroma. Mild sweet and sour taste, lemon zest. Sticky texture, mild sweet and sour aftertaste, refreshing, very nice.

12oz can, best before Feb 28, 2023, drunk 6/28/22. Clear, very pale lemon juice with golden highlights. Small, white head shows low retention. Nose is lightly tart with hints of pineapple and nectarine. Some acetic and moderate lactic acidity. Light malts suggest honey and white bread. Bit of cotton candy in here, though, which I don't love. No alcohol noted. Cotton candy, wafer cookies, pineapple and some oxidation. Thinning on the end with watery sugar. There's some Brett and lacto in there that are enjoyable, but this is wholly forgettable otherwise. Probably oughta just let Ommegang brew it's own beers.....

On tap at Avenue Pub. Pours a cloudy yellow gold with medium white head leaving spotty lacing. The aroma is funk, floral, citrus, straw. Light body, funky, citrus, yeast, nice tartness, very good.

I think this may be there solara under a different label. The aromas are sweet vinegar, pale malt and a little squash. Flavors are similar to nose, a very smooth balanced blend of sweet, tart and complimentary carbonation. A lot of flaky sedimentation.

12oz can picked up at the state store. Pours slightly cloudy with a medium sized white head, light lacing. Earthy, spicy, bright citrus, tart, white wine grapes, lemon. Nice.

Pours hazy gold into a tulip. Bright white head with little retention recedes to skim surface. Funky underripe apricot aromas. Soft with grape must and sweet chardonnay front to back. Quite wine-like.

Pours clear gold into a tulip. Bright white head with excellent retention recedes leaving sheet lacing. Sweet and sour citrus and funk aromas. Soft with sweet apricot and peach upfront turning slightly tart, underripe summer fruits and skins. Similar in character to other Liefmans offerings... quite nice.

Aromas of old farmhouse tickle our nose but very smoothly. A light fruit reminiscent of white-fleshed fruits and citrus fruits is added to the palette. A nice big creamy foam lingers at length on the pale golden liquid, clear and effervescent, leaving a beautiful lace on the glass. Mouth is extremely fruity on a biting acidity but remains within the limits of reasonable. The fruitiness is reminiscent of pear, currants and tangerine ensuring a perfect balance with wild and tangy fermentation. The malted base enhances the sweet by incorporating honey flavours and a caramel background. The hops are very unsytive, merely adding a discreet touch of greenery. The body is plump and the carbonation moderately soft thus adding breadth to the liquid. A sour beer quite pleasant to drink because of its sweetness and its very pronounced fruitiness. Des arômes de vieille ferme nous titillent le nez mais tout en douceur. Un léger fruité rappelant les fruits à chair blanche et les agrumes se rajoute à la palette. Une belle grosse mousse crémeuse s’attarde longuement sur le liquide doré pale, limpide et bien effervescent, laissant une magnifique dentelle sur le verre. En bouche, c’est extrêmement fruité sur une acidité mordante mais qui demeure dans la limite du raisonnable. Le fruité rappelle la poire, les groseilles et la mandarine, s’assurant d’un équilibre parfait avec la fermentation sauvage et acidulée. La base maltée rehausse le sucré en y incorporant des saveurs miellées et un fond de caramel. Les houblons y sont très peu expressifs, se contentant de rajouter une touche discrète de verdure. Le corps est bien dodu et la carbonatation moyennement douce rajoutant ainsi de l’ampleur au liquide. Une bière sure tout à fait agréable à boire de par sa douceur et son fruité très prononcé.

4 pack of cans from brewery for quarantine lake beers. Gold pour small head. Nose is some citrus and yeast. Tastes slightly tart lemon, basement, lime, yeast, apricot, grass. Refreshing

Heck half my rating is done because of the name. It IS pale, and it IS sour! Hazy yellow, just barely gold, thin sheet of white head. Smells of unripe grape sour. Taste is lighter on malts, solid but not overwhelming crisp grape sour. Decent.

Draft at 8 Degrees Plato. Pours a clear gold with a finger of white foam that dissipates. Green apple, pear, honey and light grain aromas. Mild tartness...Apple, honey & lemon flavors. A touch of lacto, muscat. Easy drinking.
