Tart of Darkness is a sour stout aged in oak. Brewed to resemble a stout at its foundation, the journey into tartness begins with fermentation in large oak puncheons at Bruery Terreux, where it’s treated to a special blend of souring bacteria and wild yeast cultures. Following a slow but wildly active fermentation, the beer is transferred for extended aging into a dedicated collection of used oak barrels for Tart of Darkness. This includes emptied bourbon barrels from The Bruery that previously held beers such as Black Tuesday®. This special edition was aged with raspberries, cacao nibs and vanilla beans, imparting ripe, velvety notes to our awesomely dark and roasty sour stout.

Bottle. Pours hazy chestnut, small beige head, decent lacing. Aroma is tart, tannic, berries and baking chocolate mix with bugs and acetone. Medium tart, medium funk. Kinda weird and not really coming together for me. Medium body. Eh

Poured from a 750 ml bottle. Aroma is chocolate, toffee and raspberry forward. Light oak and vanilla notes. Hints of dark fruit and alcohol. Light acidic notes. Pours a dark brown, but not quite black, with a medium sized, thick and creamy, mocha head that exhibits nice retention as it slowly recedes to the edges where it lingers. No lacing and small legs. Flavor is fairly acidic and somewhat sharp with some citrus and tart fruit notes. Medium light chocolate with hints of caramel and toffee. Medium light raspberry and light vanilla. Light dark fruit notes with cherry and cassis being most prevalent, but also some raisin and plum. Hints of alcohol. Mouthfeel is medium bodied with medium carbonation. Low astringency and low, but present alcohol warmth. Overall, I don't like dark sours, and while adding adjuncts helped the aroma it didn't do anything to help the flavor for me. The acidity is too sharp and clashes with the malt profile. The adjuncts help a bit as it warms, but its still a clashing flavor profile for me.

750 ml bottle into tulip glass, bottled on 3/21/2017. Pours nearly opaque dark brown color with a 1-2 finger fairly dense and fluffy khaki head with good retention, that reduces to a thin cap that lingers. Light spotty lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big tart/sour raspberry, cherry, cranberry, lemon, green apple, plum, red grape, chocolate, cocoa, vanilla, toasted oak, and dark bread; with light notes of coffee, smoke, leather, musty funk, red wine vinegar, and yeast/oak/roasted earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic yeast, roast/bready malt, raspberries, cocoa, vanilla, and oak barrel notes; with great strength. Taste of huge tart/sour raspberry, cherry, cranberry, lemon, green apple, plum, red grape, chocolate, cocoa, vanilla, toasted oak, and dark bread; with light notes of coffee, smoke, leather, musty funk, red wine vinegar, and yeast/oak/roasted earthiness. Light-moderate fruity/lactic tart/sourness; with light yeast/oak spiciness and roast bitterness on the finish. Lingering notes of sour raspberry, cherry, cranberry, lemon, green apple, plum, red grape, chocolate, cocoa, vanilla, toasted oak, dark bread, leather, funk, red wine vinegar, yeast/oak/roasted earthiness on the finish for a while. Incredible complexity, robustness, and balance of fruity/funky/acidic yeast, roast/bready malt, raspberries, cocoa, vanilla, and oak barrel flavors; with a great malt/tart/sourness balance. Increasingly puckering, but not overwhelming or astringent on sourness. Moderate dryness from tart/sourness, increasing though the glass. Medium carbonation and body; with a very smooth, moderately acidic/bready/grainy, and lightly chalky/tannic balanced mouthfeel that is great. Zero warming alcohol for 7.1%. Overall this is an incredible fruited sour stout! All around fantastic complexity, robustness, and balance of fruity/funky/acidic yeast, roast/bready malt, raspberries, cocoa, vanilla, and oak barrel flavors; very smooth and easy to drink, even with the increasingly sour/lactic/drying finish. Pretty much perfectly balanced between sour ale, stout, and fruit/spice flavors; with great oak presence. Very well rounded Brett and Lacto complexity. A highly enjoyable offering.
