0.75l bottle. Slightly opaque golden body with a white head. Vinegar and oak dominate the aroma, but there are notes of green apples, grapes, barnyard and some vinous notes there too. The taste is a bit less bold than the aroma. It shows notes of vinegar, grapes, oak, mold and white wine. Quite acidic. It leaves a long lasting vinous finish after the sip. Great, complex beer.

750ml bottle. Cloudy, yellow-ish, pale golden colour with small to average, frothy, half-way lasting, minimally lacing, white head. Tart-ish, tangy, woody, slightly vinous aroma, hints of white grapes, white wine, a touch of grape sugar. hints of mustard seed. Taste is dry, tart, tangy, woody, vinous, minimally funky, slightly fruity, notes of white grapes, gooseberry, a touch of mustard seed, white balsamico. Minimally oily texture, minimally sticky palate. Quite complex, minimally unbalanced and still a bit harsh after maturing for some years (bottled Nov. 2016].

(750ml bottle) Pours a rather hazy yellow with a rapidly fizzing set of bubbles and no head. Notes of moderately tart lemon and lime coupled with a distinctly strong Sauternes character, lots of both sweet white grape dessert wine and oak, grape pips, apple skins, hay, moderate funk, bready malt, touches of vanilla even. Long finish is heavy on barrel and dessert wine with a lingering tart core and some tannins. Medium bodied with soft fizzing carbonation. This was a really barrel-dominated beer but that softened the acidity with dessert wine sweetness and oak quite nicely. Complex, and unique due to the barrel.

Tasty tart saison, a cheerful mix of cider, champagne, and farmhouse notes capped off with mild noble rot sweetness. Sour berry and clove pop up towards the middle, while the back end mosies off into the sunset with a lovely blend of vanilla, oak, and a lingering vinous tartness. Soft texture makes for easy drinking, while nose blends oak, white wine, and citrus. Pours a beautiful gold with a lasting white head. Nice bottle.

Got in a BIF from KMitch. 750 ml bottle into tulip glass, bottled on 11/18/2016. Pours fairly hazy pale golden yellow color, with a 1 finger dense and fluffy white head with good retention, that reduces to a thin cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big tart/sour lemon, lime, orange, citrus peel/zest, peach, plum, pear, pineapple, apricot, passion fruit, papaya, mango, melon, guava, berries, red/green apple, white grape/wine, peppercorn, oak, cork, wet wood, hay, straw, herbal, grass, wheat, cracker, and white bread; with lighter notes of leathery/musty/lacto funk, white wine vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy/acidic yeast, moderate pale/wheat malts, and wine barrel notes; with great strength. Taste of big tart/sour lemon, lime, orange, citrus peel/zest, peach, plum, pear, pineapple, apricot, passion fruit, papaya, mango, melon, guava, berries, red/green apple, white grape/wine, peppercorn, oak, cork, wet wood, hay, straw, herbal, grass, wheat, cracker, and white bread; with lighter notes of leathery/musty/lacto funk, white wine vinegar, and yeast/oak earthiness. Slight oaken vanilla well after the finish. Light-moderate peppery yeast/oak tannin spiciness, lactic tartness, and wine tang on the finish. Lingering notes of tart/sour lemon, lime, orange, citrus peel/zest, peach, plum, pear, pineapple, apricot, passion fruit, papaya, mango, melon, guava, berries, red/green apple, white grape/wine, peppercorn, oak, cork, wet wood, hay, straw, herbal, grass, wheat, cracker, white bread, leathery/musty/lacto funk, white wine vinegar, and yeast/oak earthiness on the finish for a while. Incredible complexity, robustness, and balance of fruity/funky/spicy/acidic yeast, moderate pale/wheat malts, and wine barrel flavors; with a great malt/tart/sour and yeast/oak spiciness balance; with no puckering/astringent flavors after the finish. Light-moderate increasing dryness from lingering tart/tangy/sourness, and yeast/oak spiciness. Medium-plus carbonation and medium body; with a very smooth, moderately bready/grainy, acidic/tangy/tannic, and fairly crisp balanced mouthfeel that is great. Minimal warming alcohol for 7%. Overall this is a fantastic sour/wild saison. All around outstanding complexity, robustness, and balance of fruity/funky/spicy/acidic yeast, moderate pale/wheat malts, and wine barrel flavors; very smooth, crisp, and easy to drink with the modestly acidic/spicy/tangy/tannic/drying finish, not overly lactic. This is definitely super barnyard, more so than most domestic wild saison examples. Amazingly well developed Brett/Bacteria and saison yeast complexity; great Sauternes wine barrel presence, and pale/wheat malt backbone against acidity. A highly enjoyable offering, and amazing style example as expected.

Bottle shared on Level 6 - cheers to Kenny. Pours hazy yellow with a light, creamy white head. The nose holds citrus fruits, lemon in particular, apple sauce. Light sweet flavour with aggressive acidity, raw alcohol, a little vinegar. Full bodied with spritzy carbonation. Warming finish, some throat-burning acidity, more ripe lemon, apples. A bit harsh.

Bottle split at L6, thanks to Kenny, 22/05/18. Hazed light golden yellow with a decent off white cap. Nose is pissy grapes, light funk, toasted grains, lemon tinged straw. Taste comprises barnyard tones, burnt lemon rind, grains, yeast flicker, vinous tones, white grape must, funk. Medium bodied, fine carbonation, drying close peppered with an acidic rise. Decent stuff ... comes over more as a sour to me.

Level 6 Bottleshare. Gusher, calms down quickly. Hazy gold beer, small pale cream colour head. Smooth palate, reasonable fine carbonation. Tart lemon, some guezuey vibe. The tartness is nicely offset by the dessert wine. Light tangy finish. Interesting and drinkable.
