For the past two years, we've been making a fruited blend with Camerise in small quantities. Also known as haskap or blue honeysuckle, these berries are slightly sweet with a beautiful acidity.
The beer's color is a deep, deep red. It's powerful and very fruit-forward, but still maintains a nice, mellow balance between acidity and astringency.
We didn't have to look very far for a its new name... a blue fruit that makes a blood-red beer: Sang Bleu. Our friend Ammo has outdone himself once again, creating a superb new label to go with its new name.
Maceration of 2-year old lambic with blue honeysuckle.

Bottle at Holy Grale. Sampled from the tap at Holy Graile. Pours a slightly hazy light red with a pink hue and a white head that dissipates to the edges quickly. Aroma has a great herbal funk with a touch of light tart fruits coming through. Flavor is more herbal and funky with only a hint of tartness in the finish.

Pours ruby with good pink head. I'm not sure what haskap berries are but some raspberry ish vibes. Light bretta. Some grapefruit. Bottle pour at Snally.

Bottle pour at Snallygaster 2025. Poured a nice dark ruddy red color with a small, wispy slightly pink head. Aroma was big raspberries. "The haskap berries taste like haskap berries." Flavor was refreshing and nice delicious fruit, nice mellow tartness.

Bottle 2025 edition. Almost clear, dep red body under a small pink head. Aroma is acidic raspberries (I don’t know how honeysuckle berries smell like), hint of cherry, lemon and mild funk. Taste has acidic berries like aroma, raspberry, cherry, lemon with mild funk and hint of wood. Nice balance in flavors and body, not very intense in any direction- should not offend anyone. Nice and easy drinkable fruit lambic.
