Patiemment élevé durant l’hiver au sein de notre chai, ce cidre a été obtenu grâce à une fermentation lente et spontanée menée à basse température avec des levures indigènes. Sec, minéral au final complexe soutenu par une belle amertume, il s’accommode de fruits de mer – notamment des huitres – ou d’un plat de poisson. En fin de repas, il s’associe avec un fromage de chèvre.

Bottle at home, thanks Maakun! Near clear light amber with white head. Sweet and tart apples, red apples, massive tannins. Rusty, apple stem woodiness, massive dry tannins. Bottle shared at sjogro's birthday. Clear orange golden with very small ring of bubbles. Dry apple peel, funk, soft juicy apple, dry old wood, leather, earthy funk, dead leaves. Almost no sweetness, medium bitter and light tart. Medium bodied with very dry finish with lots of tannins. ⁰

Bottle picked up in Brittany, France. consumed at Fairport Annual Reunion, Friday 11th August 2017 Light orange, lively, bubbly, spritzy on the pour. On the nose you would imagine it to be a touch sweeter than it is, It’s fruity apple pie, but quite dry, I like it, shared with Mr Ferret. A7 A4 T7 P4 Ov14 3.6
