Saison du Blé is the harmony of a fluffy Wheat Saison and a tart, Missouri Saison. The wheat balances a very dry body with a creamy, billowy mouthfeel, and our local microflora adds complexity and acidity. This Saison was aged in Chardonnay barrels and an American Oak Foedre for several months before being naturally conditioned in this bottle. [Released 7/24/2015]

Batch #3 bottle, drunk Spring 2016. Lovely pour, as usual from SP, with a big, well-retained white head topping a minimally hazy, bright flaxen-golden body. Oak again, and wine, but it’s nowhere near the intense, overpowering levels of the previous batch. While I think the complexity of this one is still a bit suspect, overall, being heavily given to oak/wine/tannin, this is certainly still respectable and a far cry from the pure Chardonnay bomb that was batch 2.
