Poured from a 750 ml bottle. Aroma is somewhat fruity with pear, red apple and stone fruit notes. Lighter cherry and raisin notes. Moderate malt notes of toasted bread, caramel, honey and crackers. Light notes of alcohol. Pours a slightly hazy, copper-brown with some auburn hues and a large, thick, pillowy, light tan head that recedes slowly to a small film that lingers. Light lacing and small legs. Flavor is somewhat sweet with light acidity. Moderate notes of cracker and toasted bread with light notes of caramel, honey and nuts. Moderately strong bitterness and light alcohol notes. Medium notes or pear, red apple and stone fruit with lighter notes of raisin. Mouthfeel is medium bodied with medium carbonation. Low, but present astringency and low alcohol warmth. Overall, a decent Fantome with a lot of character that I remember from old Fantome. The bitterness and astringency are a bit strong, but malt and fruit esters are solid.

The 22nd edition in the Santé series by Fantôme, of which each and every edition is a unique beer - I'll probably never be able to catch up with all of them, especially seen the prices vintage bottles of earlier editions seem to generate on the second hand market. Bottle with cork from Être Gourmet. Very thick, yellowish pale beige, creamy, tightly lacing head over a misty ruddy copper coloured beer with warm orangey hue. Aroma of dried red berries, soaking wet bread crust, red apple peel, toast, fresh thyme, old apple cake, raspberry filling and 'praliné', watermelon, dried lavender, grapefruit peel hint, soap, rose petals. Fruity, estery onset, apple, peach, some banana, very sharp and fizzy carbonation, numbing at first but calming down after a while; nutty and caramelly malt sweetish base drenched in dried red fruit and spicy aspects, the latter accentuated by retronasal phenols (cloves); dry and resinous hoppy bitter finish with a 'dirty' and bready yeastiness in the end. Pleasant Walloon 'ambrée' Fantôme style, with an unspecific dash of red fruits and spices added, accessible to Fantôme standards but nonetheless interesting and flavourful.
