C’est la création cidrière de 2012 : la Cuvée Blanche (4° vol.) est bien née et porte bien son nom. Issue d’une récolte de notre variété de pommes Guillevic, elle est mono-variétale. La Guillevic est une pomme ancienne réputée pour son jus doré, presque blanc.
Sa fermentation est lente et développe des parfums acidulés, aux joyeuses notes d’églantines, de pêches blanches et d’agrumes. Dépourvue d’amertume, ses arômes sont particulièrement fins et apportent une douce fraîcheur au palais.
Les anciens surnommaient cette authentique gourmandise idéale pour l’apéritif : le champagne de nos campagnes.
La Cuvée Blanche se sert fraîche et accompagne avec bonheur les desserts aux fruits ou bien les gâteaux au chocolat. Elle s’apprécie également à l’apéritif.

75cl bottle @ Manoir de Kinkiz, Brittany. Pours a pale gold, spritzy fine carbonation. Aroma of rich, juicy, sweet guilevic fruit, a little dry on the palate but with great guilevic character shining well. Great SV.

Bottle shared at sjogro's birthday. Clear light golden with some bubbles. Fresh crisp apple, light sugary juice, pear, white grape, dry mineral funk. Under medium sweet, light tart and bitter. Medium bodied with oily feel and sparkly carbonation. Lovely.

Bottle shared on 40th birthday, in the sun, on the roof. Clear yellow with white bubbly head. Sweet and tart apple, icy and fresh, light lemony, some soft green herbal leafy touch, a bit of white wine, wood and tannins. Medium sweet and tart. Medium body. 750c&c from Wine & Cheese in Clayton, MO. Pours hazy light gold with a fizzy white head - large one. Carbonation was pushing cork from bottle. Aroma of somewhat mildly oxidized wood and/or apple. A very delicate aroma. Near med body. Flavor is lightly sweet, a bit of skin astringency, some smooth, "aged" apple. All very well blended. A delight to drink. Much more mellow than so many North American ciders. It compares well to Normandy ciders. I’m really liking it.
