Our brewers decided to take a different approach with Rebelse Strop. In particular, they opted for a fairly unusual and stubborn yeast variety: Brett. This obstinate variety causes the beer to continue developing over the course of time. Along with dry hopping, where the hops are added in the fermentation phase, this feature gives the beer a splendid aroma and a fantastic taste.

Golden colour with lasting head. Aroma has an interesting funky Brett like note. It comes through in the flavour too. Furthermore light caramel malts and bitterness coming from the yeast.

330ml bottle at Hemelvaart, Ayton. Pours light hazy golden with a thick white head. Aromas of light brett funk, sherbet, grassy hops, dusty cupboards. Taste is dry, light bitter, dry funk. Abrupt finish. Interesting though.

Bottle at Volkscafe St Jakob Brugge. Hazy gold colour lasting white head. Bretty aroma no doubt. more fruity than Orval. More of a blond in the mouth. Not too fizzy thank goodness. A bretty blond beer. Thats pretty tasty. Yes enjoyed it good brett character over a decent blonde

Clear pale orange to light beige beer, big irregular solid creamy off-white head, very stable, bit adhesive. Aroma: fruity, peaches, bit funky, brett notes, bit "weeïg" (sorry, won't translate correctly into English). MF: ok carbon, medium body. Taste: pretty chemical, band-aid, unpleasant bitterness, bit metallic, somewhat fruity, hint of that peach we smelled earlier. Aftertaste: sourish, brett notes, pretty bitter, peaches, apple skin, some tannins, bit chemical.

Anaranjada, turbia. Espuma deja cerco y película. Aroma asidrado, fermento. En boca presenta un buen punto de gas y un adecuado equilibrio entre una rica base malteada y el toque ácido asidrado que anunciaba en el aroma. No es mala. Ni tampoco mi estilo.

Gusher!! to huge, if receding, bit fluffy off-white head over cold hazed ochre-orange beer. Very "beery" nose (yeast & malt), but also citrus and fine spices. Yeastesters, and indeed, bit of Brett, including floormop. Light acidity, finish has hints to fine sugary sweet. In the mean time, spices, young vegetables and Bretts vie for attention. Bit of light-sourish oranges. Very spritzy, highly carbonated, quite slick, velvety texture to a chewy MF. This might easily be the best beer ever tasted from the Mater brewery. Pity about the point lost for the gushing!
