Our brewers decided to take a different approach with Rebelse Strop. In particular, they opted for a fairly unusual and stubborn yeast variety: Brett. This obstinate variety causes the beer to continue developing over the course of time. Along with dry hopping, where the hops are added in the fermentation phase, this feature gives the beer a splendid aroma and a fantastic taste.

Bottle shared at home - Golden pour with white hesd. Sweet fruity and malty action, some white sugar, light citrus fruity with some lemon, straw, grass, medium body, sweet malty finish.

Bottle. Gold with a large white head that's never less than a coat. Aroma of oranges, nectarines, dough, floral and spicy notes, bracken. Moderately sweet, mildly funky, spicy and decisively bitter at the end. I said the normal version was a "bit like an attempt at an Orval knockoff with no Brett", so here it is with Brett. And it lacks the depth of Orval but it's a good beer. Certainly worth getting a few and seeing how it develops.

Rocky white head left a froth on an unclear, slowly carbonating amber body. Yeasty aroma. Medium bodied, airy on the palate with a sticky back. Belgian yeast, hoppy, tangy, pithy & citrus tastes with a long bitter finish. Reminds me of De Ranke XX Bitter.

(Bottle, 0.33 l - 23/02/22, at One Pint Pub, 20180604) The beer poured golden and clear. Its head was medium sized and white. Aroma had spiciness and fruitiness. Palate was medium bodied with medium. Flavours were honey, grass, Belgian style yeast, sweetness, malts and bitterness. Aftertaste was watery, sweet and bitter. A decent Belgian ale with spicy twist.

Op zondag 3 juni thuis uit een flesje. Gouden kleur, wit schuim. Een zeer goed "gistig" aroma, met een uitstekende gistsmaak. Erg lekker!

Zythos 2018. Hazy golden with a lasting white head. Malty aroma with fruity notes and nice brett funk. Sweetish malty flavour with yellow fruits and funk.

Bottle at home, golden beer, large head. Aroma is yeast, fruit, malt. Taste is the same, dry yeasty flavour. bitter. not bad.

0,33 flaske fra Belgisk Bryg, hjemme: lett uklar gylden med flott skum som varer. Fruktig/funky duft med brett, urter, jordaktige toner og krydder. Smaken likeså - kompleks og interessant. Mykt avrundet og krydret bitterhet i avslutningen.

Thanks! Sampled bottled @ Modeste 2017. Orange, soapy uneven white head. Nose is some dull grain, low soap & orange peel but also a bit of brett. Served insanely cold like most beers at the festival. Orange peel, grainy with an agreeable, grainy lively brett profile, bit fizzy. Bit too tame but the brett is not bad & definitely improved this beer for me. Nice to see guys like this trying something like this.
