Our brewers decided to take a different approach with Rebelse Strop. In particular, they opted for a fairly unusual and stubborn yeast variety: Brett. This obstinate variety causes the beer to continue developing over the course of time. Along with dry hopping, where the hops are added in the fermentation phase, this feature gives the beer a splendid aroma and a fantastic taste.

Gekregen op 13-06-2020 van mijn zoon en familie voor mijn vaderkensdag. Gekocht in De Bierhalle te Melle. En thuis geproefd op 23-08-2020.
Rebels Strop wordt gebrouwen door Roman in Oudenaarde, als gist word de Brettanomyces-gist gebruikt en dan weet je dat je iets zurigs mag verwachten.
REBELSE STROP is een helder stro-geel biertje dat een overvloedige hoeveelheid wit schuim produceert in een vaste slagroomvorm. Het blijft sterk aan de glaswand kleven en blijft zeer stabiel, het topje van het toreken dat zich bij het uitschenken heeft gevormd zag ik nog als het glas bijna leeg was. Je ziet veel CO2 pareling met fijne belletjes.
HET AROMA:
Wat zurig, mout
DE SMAAK:
Licht zurig, wat gistbitter, ook wat hopbitterheid, graanmout en mout
HET MONDGEVOEL:
Medium body en een normale koolzuurprikkeling.
DE NASMAAK:
De hopbitterheid vloeit lang uit, een licht droogje.
HET TOTAALGEVOEL:
Een harmonieus biertje.
HET VERDICT:
Dit biertje heeft een licht zurige frisheid die overgaat in een bittere afdronk. Het is de eerste keer sinds ik speciaalbiertjes proef dat het schuim zo stabiel blijft, het vormt een toreken in het midden van het glas en het topje blijft overeind tot het glas bijna leeg is.

An orange beer, a head is big and blond. Aroma has green apples, other fuitness, barnyard. Nice. Taste has fruitness of apples, barnyard, sourness. Medium bodied. Pretty strong bretta, nice.

10th July 2019, 33cl bottle in Tom's bar (Brugge). Golden pour, white crown. Like a timid young 'Orval' in many respects, crisp, yeasty, a faint 'tartness' and a fruity/malty flavour; nice!

33cl Bottle from Vonk. Golden colour, white head. Aroma of Brett, funk, light cheesy, peppery, light fruity sweetness underneath, I dare to say even light Orval-ish. Flavour is a mix of a typical sweet-ish Belgian Blond ale with funky Brett mixed in, and the result is more than decent. Light to medium bodied. Nice funky surprise.

Bottle from a gift box. Pours clear golden with a lasting, small, frothy, off-white head. Aroma of mashed turnip & potatoes, cheese, sourdough, yellow apple, unripe pear, straw, hay. Taste is light fruity sweet, notes of apple, pear & apricot, balancing nicely with a medium funky sourness that contains sourdough, cheese, lactic acid, hay, some citric tones; bitter accents of grass & straw in the back. Dryish, grassy hoppy finish, lingering lemon, straw, brett, apple, a bit tonic-like. Medium body, slick texture, lively carbonation (impairing the taste a bit). Feels a bit clinical in its execution (Let's take Gentse Strop and add some brett) but the result is decent.

330ml bottle outside in the sun at Universal Lounge Bar in Albir. Steady, rocky white head over a misty golden body. Spotty lacing. Mixed aroma of yeast, fruits and bread. Oily hops, apricot, and moments of yeasty fruitiness to the taste character. Integrated alcohol to a mid-sweet dried fruity ending. Mouth filling. Pretty nice.
