This is a beer that began over two years ago, with a traditional turbid wort recipe, an overnight slumber in our outdoor koelschip, and then 2 years fermenting in a variety of oak barrels. More recently these barrels were blended, and given a long conditioning in the bottle. So what does this Intermodal taste like? It has a moderate level of acidity that’s softer than it is extreme, subtle aromatics of aged hops and honey, with dazzling notes of white grape, hay, oak, and peach.

Bottle from the brewery. Hazy orange pour with a large white head. Funk, wet hay, light Cirtrs yeasty fruitiness, a touch vinous. Mouth feel is bright, and crisp, lively carb. Finish is tart, medium funk, lemon zest, wet hay, wet grass, funky Brett.

(Draught at Akkurat, Stockholm, 4 May 2024) Golden amber colour with brief head. Fruity, sourish nose with notes of rhubarb, citrus, grapefruit and oak wood. Fruity, tart taste with rhubarb, grapefruit, lemon and oak wood. Low bitterness. Medium body, dry. Tasty and well balanced, with a fresh acidity and a good wood character. Great beer.

(500ml 2019 bottle c/o Herbalist, thanks!) Pours nearly clear deep gold with a small and fading white head and no lace. Aroma is quite Bretted as expected, green apple and some pear, sour pit fruit, quite wet hay, leather, some soft phenolic quality but not too rubbery, slightly musty oak barrels. Flavour is quite high-acid for a 'lambic', like sour peach and yellow plum, some Meyer lemon, lactic and light acetic acid, quite rounded buttery sort of wood (Cali Chardonnay circa 2000), a bit of hay, semi-drying lactic finish with lots of tart peach and peach skin, candied lemon peel, some wood and light funky hay. Light astringency in the aftertaste but it's balanced by a really round fruity character. Medium-plus body, very oily, fine carbonation. It's not lambic, that's for sure. Even a 2 year blend of the 'real stuff' would have much more layered complexity. As a wild it's pretty solid and fruit-forward, and with more richness than when it was new in 2019/20.

Poured from the tap (2019 vintage). Cloudy yellow with small white head. Some peach, tartness, a decent amount of phenolic band aid character coming through on the taste. Disappointing.

Bottle. Pale amber with a slight haze. Not much head. Light malt sweetness and a touch of brett. On the palate, light brett and funk, again a sweeter malt note. It’s decent, I like it but could be more complex. Solid.

500mL bottle, pours a hazy golden with a small white head. Aroma is quite funky, with wild yeast, oak, some horse blanket, and a little manure. Flavour is lightly tart and moderately funky, with lots of wild yeast, moderate funk, light-medium acidity, and some oak. There's some phenolic character that creeps up with more sips. Quite dry and full of bugs, but not all that complex. Not bad.
