Fermentation activated by inoculum of lactic bacteria and yeasts (including Brettanomyces) that are some varieties that can be found in spontaneous fermentation. Maturation in barrique for 12 months. Addition of Burè Roca pears, an ancient Piedmontese variety now getting lost.

(Bottle) Golden amber colour with brief, bubbly head. Fruity nose with notes of sour fruit, pears, herbs and oak wood. Fruity, tart taste with pears, sour fruit, barnyard, oak wood, spices, a touch of toffee and a fresh, almost lamcib like, acidity in the finish. Medium body, dry. Fresh, tasty and well made. Very nice.

Bottled (from Systembolaget Umeå). Slightly hazy orangeish amber colour with a small white head. Aroma is tart fruits, wood and some mild spiciness. Flavour is spicy, some floral and mild toffee along with a big time wooden tartness/sourness. Almost Cantillon/3F like dry and sour tones.

Bottle from explosivedog; pours dull yellowish brown. Aroma is pear, maltiness, light funk. Taste is lightly sour, loads of pear, some malty sweetness. Fine, but nothing to write home about.

KØLF 050221. Deep golden color with an off-white head. Aroma is horseblanket, yeast. Flavor is barnyard, yeast, lemon, bread, berries, funk, wood white wine, grapes. Very nice beer.

Bottle, well stored 2018 edition. Clear deep golden body under a small white head. Aroma has smooth malt, wood, white vine, mild acid berries and funk. Taste is really smooth, soft malt, some toffee, acid, berries, subtle pear, funk and mild spices. Fine balanced body and same smooth sweet and sour, fruity, funky aftertaste. Really tasty, smooth and nice.

Bottle. A clear golden colored beer with a few bubbles on top. Funky aroma, leather, barnyard, lemon, raisin notes and some generic fruityness in the aroma. Some bready hints. It’s medium-tart, nicely carbonated and dry, with a soft, pleasant carbonation. Leather, funk, grapes, raisin, and some lemon in the flavor, notes of bread in the far back. Long pleasant finish. Really nice and mellow this one. 210205

Bottled 375ml. -at Goblet Zagreb, shared with hrabren. Unclear golden coloured, minimal white head that went away fast, liht grapea and some pear in the nose. Sour fruity and grapes taste with notes of pear and tartish finish.

0.375 l bottle at Goblet Beer Store, Zagreb. Shared with Ogi. Hazy orange to ochre, minimal head. Aroma is slightly funky, quite intensely fruity, apricot, peach, other stone fruit. Vinous, peppery phenols, doughy. Not getting the pear clearly, which isn't that important. Nicely rounded sourness, spiky, spicy, prikly. Body a bit light. Funky and phenolic finish. Fruity flavours, stone fruit, lemony. Quite nice.
