ABV: 5.4% IBU: - Ticks (all batches): 34
Fermentation activated by inoculum of lactic bacteria and yeasts (including Brettanomyces) that are some varieties that can be found in spontaneous fermentation. Maturation in barrique for 12 months. Addition of Burè Roca pears, an ancient Piedmontese variety now getting lost.

Flaska från SB, 2018. Klar, något mörkare guldfärgad i princip helt utan skum eller kolsyra. Funkig, päron, gröna druvor, stall, fat, sötma. Lambicliknande, ganska snäll syra men rejält funkig. Riktigt gott!

Flaska från SB, 2018. Klar, något mörkare guldfärgad. Funk, päron, gröna druvor, stall, fat, sötma. Gott!

On tap at Arrogant Sour Festival 2019. Hazy orange, medium white head. Funk, some wood, some ripe fruit, apricots, didn't get much pear, bit acetic, medium sourness. Medium bodied.

Tap at TCBW. Dark amber-orange colour, small off-white head. Farmhouse, pears and other riped fruits in the nose. Light-bodied. Tartness, pear, apple in the fruity but dry flavour. Nice brew!

Draft at Ranzani 13, Bologna, Italy. Pours fairly transparent, amber gold, with minimal foam, very fine. Aroma is definitely Brett, fruity, winey. Actually very similar to a geuze. Body is average with good carbonation. Intense astringency, some stickiness. Taste is intensely sour, dominating over everything else. Finish is not particularly short, but leaves a very clean mouth.
