For this iteration of Poetica, we brewed Mary, our German-style pilsner, with a single decoction mash process, our sourced German Hersbrucker and Spalter hops, and then lagered in a single French oak puncheon in our cooler. After three months of conditioning, the beer was moved to a tank and krausened (as is all of our lager) with fresh fermenting beer to provide natural carbonation. After another two months of further conditioning and slow carbonation, we present you with a beautifully softened, refined, and elevated representation of Mary.

Pours clear gold into a stein. Bright white head with excellent retention recedes leaving spot lacing. Oak and meadow aromas. Soft with oak, mulitgrain sourdough and meadow front to back. Lasting mildy tart and dry oak finish. Nice.

Lukr at Three Penny, 1/18/24. Perfect pour of bright, copper-tinged, golden-brass with a giant, creamy, white head. More subtle, earthy, spicy and dusty than it's siblings, with a pinch of yellow fruit, lots of Chinese tea and light baguette-like malt character. Clean, crisp, lots of mineral and light yeast on the finish. Rustic bread, more tea and spice with leafy, earthy, gentle hop notes, mild spiciness and an excellent melt depth with honey and biscuit in the finish. Hint of lemon, kumquat, more tea and light mineral. Rustic and understated but full of depth and complexity. As interesting as P3 is in your face.

On tap at FOFA. Pours golden with frothy white head leaving sticky lacing. The aroma is toasted grain, grass, floral, citrus. Full body, grass, citrus, grain, delicate bitterness, loved this beer.

Tap, at the brewery. Yellow gold. Light haze. Super dense, thick, lasting, off white head. Looks fantastic. Nose has buttery grain. Soft, leafy hop. Honey. Taste is upfront sweet, with a slightly dry, herbal, grassy bitterness. Light to medium body. Very fine, foamy carbonation. This beer is served extremely cold, and is drinking great for it. Light, leafy, grassy bitterness to finish. Lovely beer.

On tap pours a crystal clear gold with tons of frothy, white head. Nose is doughy and yeasty, light butter, neutral wood, lemon. Flavor follows, doughy, yeasty, buttery, neutral oak, reminded me of Pilsner Urquell Nefiltrovaný. Sweet corn too. Finishes creamy. Sublime. 9 5 8 5 17

Hay yellow. Crisp and clean aroma. Grass and oatmeal. Chewy mouthfeel. Cereal pine oatmeal nutrisweet finish. Dense mouthfeel the chewy mulch nature is satisfying. Needs some sauerkraut and pork.
