December 2014 bottle, drunk 8/18/15.
Slow gusher...so an obvious perfect appearance...huge, well-retained white head atop a wonderfully carbonated light golden body with great clarity.
Leafy, woody hop notes, with some very light perfume notes greet the nose and are quickly outdone by delightfully elegant brett and other yeast esters. Good tartness but not heavy, with a strong plastery quality of fresh yeast and lovely pepper phenolics on the end. Even a touch of light citrus thrown in for good measure. Very, very sniffable. Clean and saison-y, with no alcohol or flaw.
Hop bitterness is noted immediately. It’s always at the edge of the palate, nipping away, but with 8 months on it, is quite enjoyable and easily balanced by the soft, honeyed malts and light bread. Elegant esters and phenols, with plastery yeast qualities, fruity, lightly tart brett and no alcohol or flaw. Really, really good and was unhappy to finish it. This must have been way too hoppy while fresh, however, as it’s still got a big bitter edge to it.

Bottle. A hazy, pale golden to yellow colored beer topped by a dense, finger-thick white head leaving some lacings. The aroma is quite fruity, lemon zest, grapefruit and pine cone notes. Some grass and hay, in a very good way that is, and there’s also a light funky touch of leather and barnyard. It’s rather tart on the palate, dry and quite effervescent, medium to full-bodied. Grapefruit, lemon zest, pine cones, some grass and hay in the flavor, as well as funk and a nice bitterness. Lasting bitter, fruity and citrusy finish. Damn, this was nice, especially after a long car ride. Quenching, tasteful and really more-ish. 150616
