Our style of brewing has always been about taking chances. It’s an extension of our “What if” mentality, wherein we ask ourselves what would happen if we did things differently in the brewhouse, such as fermenting with a different strain of yeast or, in the case of this beer, incorporating whole-leaf green tea imported from Japan. The answer, embodied in this IPA when we first released it in 2011, was something truly magnificent, delicious and well worth brewing again. But what if we changed it up a bit? This time around, we exchanged Pacifica hops from New Zealand for Helga hops from Australia. The result is an IPA that’s as bright, herbaceous and bitingly hoppy as the one that’s had our fans requesting its return ever since its depletion from store shelves, but with a modern, hop-driven twist that makes this second draft unique and tasty in its own right.
Bryan Baird of Baird Brewing Company, Toshi Ishii of Ishii Brewing Co., and I selected hop varieties for this beer that would blend well with Japanese sencha green tea, and I think we succeeded. Heavy doses of Crystal and Australian Helga hops, accompanied by the Aramis variety from France, provide a wonderful, spicy, and fruity hop character that blends exceptionally well with the herbal and grassy sencha tea flavors. The very late addition of Japanese Sorachi Ace hops provides hints of citrus and dill. Aside from switching out the Pacifica hops for Helga hops, we kept the recipe the same. The ABV on this rebrew is slightly higher than the 2011 release because of the annual changes in malt enzyme strength and variability with the yeast. This was one of our team’s all-time favorite Stone collaboration brews and we are thrilled to be brewing it again.

Bottle. Hop Hideout, Sheffield. Courtesy of the missus. Hazy, light amber. Thin, sticky, lasting, white head. Nice, toffee apple, orange hop aroma. Some wet hop. The green tea comes across herby, and lightly spicy. Smells great. Taste is soft sweet, turning fruity, herby bitter. Smooth palate. Quite creamy. Feels absolutely nowhere near the ABV. Long, light, herby bitter finish. Wasn’t sure I’d like this, but it’s lovely. Ridiculously drinkable.

Tap at Komachi. Deep golden color, hazy. Great nose of green tea and hops, very herbal, cirtus, pine, lightly malty. The tea comes though very well. Rich, creamy, and tasty. Again, lots of green tea, something like a maccha au lait but beer. Not too sweet and not syrupy for the size. Very enjoyable. Tea is much more noticeable this time.

22 oz. bottle purchased at Craft Beer Cellar, Portsmouth. Lots of suspended particle held in the bright yellow liquid of this brew. The aroma is really nice blend of tropical fruit, tea leaves and peaches.
The flavor throughout is very herbaceous from the tea with the tropical fruit flavors helping herbal character not get to overpowering. Decent malt bill giving honey and pale grain base. The finish is citrus with some grassy hints turning a pretty strong lasting bitterness that also shows the tea leaves again. Honestly it has a nice balance. Damn, I really dig this!

Bottle @ The Cad’s 10yr Shindig. Pours a hazy golden color with a small white head. Has a fruity malty spicy hoppy weak green tea aroma. Fruity malty spicy grapefruit hoppy bitter weak green tea flavor. Has a fruity malty piney hoppy bitter grapefruit finish.

Bottle at the Cads 10th Anniversary bash, thanks to Paul, 29/03/15. Lightly hazed golden with a moderate off white covering. Nose is green tea, straw, hops, orange pith, mandarin. Taste comprises earthy hops, pine needle, green tea infuse, spice, peach, citric pith, mandarin. Medium bodied, fine carbonation, semi drying close with herbal tones and an earthy hop rinse. Decent stuff, good balance, works well - would never have guessed this was more than 7% ABV.

Bottle shared at The Cad’s 10yr Shindig. It pours clear golden with a small white head. The nose is earthy, sweetish, big green tea aspect, umami, seaweed and some musty notes. The taste is crisp, bitter, earthy green tea, floral, light alcohol, lemon rind, lemon sherbet, minerals and pepper with a dry finish. Plenty of lingering bitterness. Medium body and average carbonation. The aroma is a bit odd, but I think the green tea comes through quite well. Unusual, but not bad.
