Ondineke is a classic tripel, brewed in the ancient way, again with exclusive natural ingredients: artesian water, malt (barley), hops, yeast and liquid candy sugar. As in the Saison no spices are added.
Brewed with a Styrian Golding variety called Aalster Groene Belle Monopole.

Bottle: poured a deep cloudy (non-filtered) golden color ale with a super huge white foamy head with great retention and some perfect lacing. Aroma of light sweet peach with some fruity yeasty ester is really intriguing and refreshing. Taste is a well balance mix between some peach, some sweet malt with a well balance dry hops finish and some fruity ester from the yeast. Full body with minimal filtering and some great carbonation. I have to admit to being really impressed by that one.

Cloudy amber color; nice and big creamy head. Classic Belgian Ale aroma: malt, yeast, some vegetables too. Good body strength, good (dry) malt flavor, sweet for a Tripel, well balanced by the spiceness and bitterness; later there is also a light touch of sweet liquorice. More vegetables character and a light astringency appear when more sediment flows to the glass. Very good.

Bottled. Hazy yellow colour, big white foamy head. Aroma is acidic fruits, sweet barnyardish notes as well as some grass. Flavour is big wheat, hops with some spices and malts. Overall a very pleasantly balanced beer.

Aged 1 year. Pours bright gold into a tulip. Bright white fluffy micro head does not recede. Spritzy lemon and backyard aromas. Soft lemon from front to back. Lasting citrus finish. How can this have no added lemon?

Hazy orange color, cloudy white head, lace. Fruity aroma: apricot and peach in the nose. Foamy carbonated mouthfeel. Sweeter than typical Belgish tripels - more like American version of the style. Fruity, grassy, hoppy, refreshing tripel. Not too yeasty and enjoyable.

750 ml bottle, no date, poured into a Duvel tulip glass. Large foamy head turns into a lacing that covers the entire surface. Color is glowing golden with medium clarity. Aroma is strong on cookie dough maltiness and lactose-y yeastiness but offset by a fresh air clean aroma. All of which is great but upon close examination there is also a grassy/slightly herbal aroma in the background that is not desirable. Taste is creamy sweet with grassy hoppiness that creates an abrupt finish to the flavor. Leaves a lightly sweet aftertaste. Low bitterness and a below average carbonation to go with the creamy texture of the beer.

Great sour, horseblanket aroma like a lambic. Lots of sediment in the glass, yellow beer and very heavily carbonated. Good fruit flavor, spicy, and plenty of hops. Alcohol is well hidden.

Bottle. Slight gusher. Hazy amber beer with a huge off-white head and some floaties. Earthy, spicy, malty aroma - some fruity esters, but more hops and yeast. Earthy spice flavor with rich malt and some lemon/peach fruit. Medium body. LIngering spice/fruit. Fairly dry finish. Very drinkable. Nice complexity.

Lightly hazed blonde with an extra thick white head. Light coriander aroma with smooth lemony notes. In mouth, yeast, coriander and orange pulp, classy, with a medium body, and light lemon in final. Medium bodied. Bottle at BCTC 2006.
