Directly inspired by traditional saisons of the 19th century, beers meant to quench the thirsts of farm workers at harvest time, the Saison de la Senne is a beer of mixed fermentation. It is both bitter and aromatic thanks to particularly generous hopping, while at the same time developing a vinous and tangy character thanks to a blending with old lambic from the Cantillon brewery. Ripened in oak barrels for 9 months and listed at 4.3% abv.

(Bottle, 0.33 l - bottled on 23.03.2023, at One Pint Pub, 20240712) The beer poured golden and cloudy. Its head was medium sized and white. Aroma had floralness, tartness, wood and vinous notes. Palate was medium bodied and dry with medium carbonation. Flavours were floralness, fruitiness, tartness, vinous notes, malts and bitterness. Aftertaste was tart, spicy and bitter. A tasty and complex brew.

330ml bottle from Raynville Superstore. It pours hazy golden - blonde with a medium fluffy white head. The aroma is musty, funky, white grape, gooseberry, white wine, damp wood, barnyard, citrus peel, lemon rind, hay and some spice. The taste is crisp, firmly dry, bone dry, oak, some tannin, spicy, deep funk, barnyard, damp basement, mouldy, hay, plenty of citrus, lemon rind, citron, grapefruit, gooseberry, white grape skin, must and just a hint of acidity with a drying, funky finish. Medium body and moderate carbonation. Lovely depth of flavour. Super funky. Lovely stuff.

Bottle, i think from Foeders. Definitely not out of production (I think?) as it's from Mar2023. Moderately hazy amber with decent head. Very funky bretty nose, big sour notes. Wow that's a super sour! Great flavors but not the full acidity punch like a Cantillon. Light fruit-like citrusy notes, slightly woody, it's a good blend of complex flavors.

Bottle from The Beerhive. Hazy bright orange body with a white head that holds well. Lively carbonation. Faint lacing. Aroma of rhubarb and bitter lemon. Flavour of brett, bitter grapefruit and lemon. Medium body with a frothy texture. Very fizzy. Bright and vibrant. This was bottled 14 months ago and the funky yeast has really taken effect to result in a heady, zingy saison.

Bottle from Monk's: pours orange with white head. Aroma is bretty, earthy, straw. Taste is spicy, tabgy, sort of bitter. Underlying fruitiness more apparent in taste.

Oooh fucking hell. This is divine. Lovely saison graininess and light fruit. Apparently there’s some Cantillon lambic in there which I guess makes it a bit tart. Very nice oaky taste. This is sublime!

Sample (thanks omhper!). Golden colour, small white head. Aroma is fruity, floral, mild earthy tones with some mild yeasty tones. Flavour is floral, fruity, some slight acidity with mild yeasty tones.

Bottled March 2021, drunk Jan 16, 2023. Clear, deep bronze-brass-maize. Large, white head atop slowly recedes to cover. Cantillon lambic and de la Senne saison are certainly aromatic when put together (and on their own, of course). I don't know, it doesn't blow me away or anything and the lambic sort of overpowers the saison, as one would expect. But it's certainly still enjoyable to me and of course clean, balanced, and so forth. Lemon, oak, pepper, wet hay and light barnyard. No alcohol noted. Lemony and a bit sharp up front with some acetic character and/or raw oak tannin (probably the latter). Again, saison mostly drowned out here - any subtleties of it, at least. And again, other than that up front heavy tannic sharpness, it's completely drinkable and enjoyable if you enjoy either of the base beers. Kind of like a light version of Cantillon - the saison serving to dilute slightly (and only very slightly) the acidity of the lambic. Would like more brett and barnyard in place of this strong lactic, moderate acetic character, too. It's rather sweet, as well. Check back in like 3 years.
