First batch - 2008.
Second batch - August 2021.
Directly inspired by traditional saisons of the 19th century, beers meant to quench the thirsts of farm workers at harvest time, the Saison de la Senne is a beer of mixed fermentation. It is both bitter and aromatic thanks to particularly generous hopping, while at the same time developing a vinous and tangy character thanks to a blending with old lambic from the Cantillon brewery. Ripened in oak barrels for 9 months and listed at 4.3% abv.

Bottle. Light orange, cloudy. Salty tar candy. Fluffy light, burned. Funky, but with a straight forward edge. Right at the end some grapefruit peel comes around to say sorry. Interesting.

Hazy golden. Aroma is grape with light wheat and yeasty spices some bitter hops. Taste is sour sweet fruity with some nuts and unfortunately burnt plastic. Finish is also burnt plastic. That sadly ruins it for me :(

Bottle. Lightly hazy golden, white cream. Funky, grassy, light farty hop vine and wood aroma. Medium light body, citrus, grape, a hint doughy malt, light minerals, broad exotic fruit pie notes, nutty retronasal. Fresh drink!

330mL bottle, pours a hazy bright golden with a medium white head. Aroma brings out plenty of rustic notes, considerable funk from the lambic, and a little citrus. Flavour is wild and funky, with plenty of barnyard funk, rustic saison yeast, a touch of citrus, and a touch of hay. Having never had the base saison (how is that possible??), I can't compare them; but the Cantillon adds a nice dimension to amp up this saison. Very good.

Hoppy, dry, sour. Green apple, grainy malts, bitter. Quite sour for a belgian. Nice.

Bottle. Hazy golden color with white head. Aroma is nice fruits, damped mango, vineous funk, all in all not too extreme, but just great flavours. Taste is kinda juicy but also dry-ish, funky, fruity, jammy, and a dash of Lambic character in there too. Surprisingly thick mouthfeel, decent carbonation too. Wow. I am inclined to call this a masterpiece, and for De La Senne, that means something.

Bottle. Misty golden amber with an inch of white head that fades to a cm or so and lasts pretty well. Aroma of white wine, old lemons, oak, crackery dough, bracken, spices - became aware this was blended with lambic as I popped the cap. Sour and bitter with sunny fruity notes as well as a neatly dry finish. Lovely texture is light but creamy. Very refreshing.

Bouteille 33cl, bottled 26/03/2021, BB 26/03/2026.
