Barrel-Aged Imperial Stout (Smokestack Series - formerly known as Imperial Stout)

Over-the-top but surprisingly approachable, this twist on the classic style starts with several types of malted barley, rye, oats and wheat. Robust flavors of vanilla, espresso, whiskey, chocolate and roasted grain are balanced by hints of date and plum, with just enough hops to round it all out. Roughly one-third of the final blend is freshly brewed beer; the rest is aged for up to a year (or more!) in both first and second use whiskey casks.

Tap. Pours black with a small light brown head. Aromas of whiskey, vanilla, dark fruits, fudge, light oxidized, malt. Taste has dark chocolate, dark fruits, light oxidized, fudge, light roast, some bitterness, coffee.

Refrigerated 12 oz. brown bottle poured into a glass. Black with small beige head. Aroma is malty whiskey, medium body, low carbonation, and little lacing. Taste is malty whiskey.

355ml bottle. Pours an opaque black with a small, creamy, short lived, brown head that laces. Sweet aroma of roasted malt, dark chocolate, caramel, brown sugar, whiskey, toffee, vanilla, raisin, fig and oak. Sweet flavour of roasted malt, dark chocolate, espresso, caramel, brown sugar, molasses, vanilla, licorice, raisin, plum, fig and oak with a dry, whiskey warming finish. Medium to full body with a smooth, oily texture and soft carbonation. Nice complexity. ABV is well hidden.

Pours a real dark brown colour with very light copper-brown highlights. The head looks like a coffee head, mocha-coloured, decent size, retention and coats the brew a little. Soya notes over the roasted malts in aromas with some coffee, nuts, molasses and cocoa. The whiskey and wood eventually comes out over the sweetness. The mouthfeel is quite smooth with the alcohol well-hidden. It still warms up a little, but smooth and well-balanced. The taste shows dark fruits, like dates, with hints of the barrel, whiskey and a freshness of apples that lingers. This is quite smooth and nicely brewed.

Bottle from the LCBO. Very dark brown with a small quick fading khaki head leaving sparse lace. Nose is quite boozy with whisky, oak, coffee, dark chocolate, dark fruit, molasses, brown sugar, and some vanilla. Flavour is medium- sweet molasses and toffee with a medium dark chocolate and espresso bitterness. Mouth is medium with soft carbonation and a warming finish. A tad sweet and a tad boozy. 7+/3+/7/4/15

$4.20 bottle, Wine Warehouse. Pours thick black with a small brown head. Aroma is dark chocolates, whiskey, earth, barrel, coffee, vanilla. Flavor is sweet chocolate (both milk and dark), salt, earth, vanilla, caramel, whiskey, barrel, roasted nuts. Lots of good flavor here.

Bottle. Almost black with a few beige bubbles at the rim. 3- Aroma of Bourbon, mocha and brioche. Barely medium bodied, moderate carbonation. Sweet, dominated by caramel syrup but mocha, vanilla, a little raisin too, and some peppery woody notes at the end. Vague.
