From a bottle at Cantillon. Quintessence 25. Came with mackerel rillettes. Fairly flat old and dusty. Lots of oak. Woozy cognac.

Bottle pour at Quintessence 2025. Pours clear gold. Cognac barrels up front with some earthy funk on the nose. Flavour has musty straw, earthy funk, and a very nice cognac expression. Fantastic.

Tart, sour, dry, a bit musty, fruity. Apple, oak, no acidity to speak of, super smooth. Excellent.

Bottle at Quintessence. Clear dark golden, no real head. Vanilla, deep funk, caramel, cheesy, bitter green leaves, oak, chewy leather. Light sweet and sour, a little more bitter. Over medium bodied, flat. Lovely.

Bouteille 75cl lors de la Cantillon Quintessence 2025.
Pâle/dorée, pas de col.
Bouquet frais moyen, un Cognac que je trouve en net retrait – sans l’avoir lu je ne l’aurai pas vraiment détecté – retour de lambic classique en rétro-nasal, cela sent le Cantillon.
Palais est délicat assez plat – un Cognac qui ici aussi me semble trop en retrait quoique plus présent que au nez – il semble s’ouvrir avec le temps – une bouteille qui aurait mérité d’être décantée. Parfumé sur la fin sur des fleurs, barrique – à souligner cependant un lambic brassé en 2005 et embouteillé en 2010 avec déjà 15 ans en bouteille.

Cantillon lambic aged in cognac barrels, the immediate forerunner of 50° N – 4° E, but differing from the latter in not containing any priming sugar to spark refermentation and therefore completely flat; it was originally created for a media event set up by Shelton Brothers in 2010 and was briefly sold at Moeder Lambic as well. I tasted it from a twelve year old vintage bottle at the Cantillon tasting even held at BXL Beerfest. Some loose bubbles shortly after pouring and around the edge, but quickly gone and indeed no head; deep orangey peach blonde robe with amberish tinge, misty. Aroma of medium dry sherry rather than cognac though later on the cognac indeed pushes through as well in a still recognizable manner, bitter orange peel, yellow curry powder, yellow plum, unripe apricot, dried green apple peel, wooden furniture, haystack, dusty attic. Tart fruitiness in the onset, reminiscent of persimmon, dried apple peel and unripe apricot, flat without carbonation, with vinous body; a core of nuttiness and cracker-like maltiness unfolds, surrounded by ongoing tart-drying fruitiness (lemon peel, unripe stonefruit) and lactic sourness, plus indeed retronasal cognac now becoming obvious, as a sweet, marsala- and sherry-like aroma, probably a combination of the actual cognac effect on the one hand and the age of this lambic on the other hand. Dry, complex, vinous, woody, long finish – an incredibly rich lambic which stood the test of time beautifully, with the cognac having been well integrated; the comparisons with 50° N – 4° E will always remain obvious, but this is a different thing altogether. Glad I had a chance to sample this extinct Cantillon tick.

Bottle at End of All Tastings. Pours a hazy orange gold with no head, still. The aroma is strong cognac, earth, oak, nutty, funk. Thin body, earth, cognac, wood, strong funk, light tartness, held up incredibly.

Thanks again Diego for sharing this rarity at the LCBS 10. Your cellar is insane. Burnt Orange pour. I can’t really figure out what I was smelling. The flavors were sour lambic, cognac, and barrel....
Had this bottle for a second time. Destructo is insanely generous. The second time I noticed cognac aromas. The pour is flat with no carbonation. It was light and refreshing while still tangy. The notes I picked up most were orange, caramel, and muted cognac..

Pours clear dark orange, still. Aromas of sweet green grapes, lots of cognac, orange, apples, raisins, stale funk. Taste is super heavy cognacy, lots of overripe green apple, grapes, light grainy, tannic and stale funk in the back.
