We are not the harbingers of truth as some may suggest but it may indeed be argued that our brewing philosophy is tantamount to a dessert with a bellicose past. How, you may ask, would a brewery determine a likeness to hard-coated custard? Our response is simple; it’s all in the power of history, and of course, the extra finesse needed to top off a contentious treat with definition.

Bottle. Fine, so I have a sweet tooth. What of it? Pours opaque black, medium brown head, creamy with nice lacing. Aroma is vanilla chocolate roasty caramel. Flavor is very sweet indeed, tons of vanilla, chocolate, toasted marshmallow, caramel, toffee, hard candies. A respectable amount of bitterness to bring things a bit back toward balanced. Medium body. Enjoyable for what it is.

Like drinking a tub of butterscotch with caramel sauce. Sickeningly sweet. Intolerable. Drain pour. We tried giving it away at the bar, and no one would take it.

Reviewed from notes.
The appearance was a pour that is a dark brown close to black color with a one finger off white foamy head in the snifter and a one and a half finger white foamy head. No lacing in the snifter but some sticky white sporadic lacing in the pint glass.
The smell. well Southern Tier did what they’re supposed to and that’s put crème brule in the smell (I get it, its there), however, there’s also an ample amount of caramel and chocolate coming through as well.
The taste was well sticky sweet all around through the crème brule flavoring and still bringing back the caramel and chocolate, sweet sticky caramel/crème brule aftertaste leaving a dry and somewhat chocolatey finish.
On the palate, it sat at/about a decent sipping aspect to it, carbonation seems good for a Milk/Sweet Stout and to have held up this long with the ABV, there is a semi-dry yet smooth aspect rolling around the mouth and tongue.

On tap at The Cove. Pours a very dark brown with beige head that leaves sticky lacing. The aroma is a strong burnt caramel, vanilla, and roast. Medium mouthfeel with burnt sugar, sweet vanilla, and lingering roast finish. Good.

Bottle (dated 2/3/14) poured into a Belgian snifter. Pours black with a finger of tan head. Aroma is spot on creme brulee. Lots of vanilla, caramel, burnt sugar. Tasting notes of vanilla, caramel, burnt sugar, bitter roast, subtle chocolate. Full body with a dry finish. Oily mouthfeel, medium carbonation. Alcohol is pretty well hidden.

22 ounce bottle into snifter, bottled on 1/9/2014. Pours dense pitch black color with a 2 finger fairly dense tan head with good retention, that reduces to a thin cap that lingers. Light spotty lacing clings on the glass. Aromas of huge caramel, toffee, vanilla, butterscotch, cream, custard, brown sugar, toast, light coffee, and light herbal hops. Fantastic aromas with very authentic creme brulee character with light-moderate hop presence; with big strength. Taste of big caramel, toffee, vanilla, butterscotch, custard, cream, brown sugar, toast, light coffee, and light herbal/pine hops. Slight earthy bitterness on the finish; with lingering notes of caramel, toffee, vanilla, cream, butterscotch, brown sugar, custard, toast, light coffee, and slight herbal/pine hops on the finish for a while. Incredible robustness and complexity of dark malt, lactose, and vanilla flavors; with just enough hop bitterness to cut out any cloying sweetness on the finish. Medium carbonation and full bodied; with a very creamy, slick, and slightly syrupy mouthfeel that is nice. Alcohol is very well hidden with only a light warming present after the finish. Overall this is an outstanding imperial milk stout! All around awesome balance of dark malt, vanilla, and lactose flavors with moderate hop balance; and extremely smooth to sip on for the big ABV. A highly enjoyable offering.

Pours a dark, oily, almost syrupy black with almost no head to speak of. Aroma is dominated by butterscotch and vanilla. Flavor is very sweet, with strong butterscotch element that is undercut just a bit with a rather bitter finish. This is almost, not quite, but almost, the liquid magic it’s described as. That finish needs to be just a bit less stark to really make this work, though. A near classic.

Black with a small, dark tan head. Fudge brownie aroma. Taste is cocoa powder, cream, vanilla....caramel. Incredible amount of flavor. Truly a dessert. Hard to believe the ABV... Wonderful.
