American Porter Aged in Bourbon Barrels
This is the bourbon barrel aged version of Everett (1908- 1939), our grandfather’s brother, as well as the name of our American porter. In his honor, we aged this ale in select bourbon barrels for 20-plus months. The beer rested contentedly, absorbing and harmonizing with all that the oak had to offer, taking on the complex characters of the spirit and reflecting that which we remember best of our great uncle.

Bottle pour at Side Project line. Black with nice tan head. Roasty, chocolate, moderate sweetness, some bitterness, some bourbon. Quite balanced.

Dark brown colour. Nice aroma, chocolate, with soy sauce notes, some alcohol. Thick, bold, with dark chocolate, umami, molasses, burnt sugar, old wood. Not the depth of the best, but it has the usual great balance of Hill Farmstead.

500ml (thx, Eric D.!) @ Alex's shared with Ryan. Bottled on Nov-07, 2018. Appearance: very dark brown with a dark beige head. Aroma: bourbon barrel with some burnt notes, some fruity notes. Taste: nice body, moderate to high sweetness, some molasses, pleasant bourbon barrel with some burnt notes that are just on the edge of my tolerance to this character. Overall: another nicely balanced beer from HF.

Poured from 500mL bottle (bottled Nov 07, 2018). Black with small tan head. Roast malt, bourbon barrel, quite soft, simplistic, and extremely balanced.

Bottle at share: pours black with beige head. Aroma is bourbon, wood, vanilla, dark chocolate. Taste is chocolate, vanilla, loads of barrel. A bit overpowering. Still excellent.

Bottle, 2020 vintage, courtesy of Ryan and Chris D. Pours black with a tan head. Bourbon, rich vanilla, prune, maple, cherry, freeze dried raspberry, chocolate biscuits. Medium body. Aroma is heavy bourbon but the taste is rich and complex. Excellent.

2014 edition. Pours black, small tanned head. Smell is roasty, full, biscuit, bourbon. Mild soy sauce. Umami. Taste is full, thick, bit sharp. Shows mild, acceptable age. Almost a tad tart trough its roastyness. Bourbon in the back, mild carbo, sticky ending. Mild boozyness. Very good, still. Bit soy sauce in the finish.
