Foeder N°108 is a cask of 10.000 liters made in 1935 which we have acquired 22 years ago. It originates from a former brewery where it was used for beers with a high level of volatile acidity. The lambic of this foeder enriched the character of our geuze blends. In February 2019 we decided to dismantle foeder 108 and replace it with a new one. The brew of April 27, 2016 was the last production that has aged in this veteran and was bottled to be Oude Geuze Boon VAT 108 bis on November 28, 2018. After this the foeder was dismantled and will serve for spare parts of other casks. The Lambic for Oude Geuze Boon VAT 108 bis has aged for 2 years and 7 months in foeder N°108. After bottling it has spent more than a year ageing in our warehouse and is now ready to be drunk. With en apparent refermentation of 89%, this VAT 108 bis is not harsh, but has a nice sour balance. The alcohol percentage is 8% (ABV). The aroma is comparable to the first version, ""VAT 108"", which was released in September 2017. The wine-like accents in this Oude Geuze are combined with a clear 'old beer' character which causes for a strong and robust taste with unmistakable, but not overwhelming volatile acidty.

Bottle from Delhaize ('past' its due date so at 50% off...). Bottled: 11/2018. Clear dark orange, small, frothy, white head. Aroma of plum, rhubarb, old orange, green apple, horseblanket, leather, unripe apricot. Taste has sour rhubarb, green apple & plum, some sweetish apricot, funky wet straw & hay; lemon acid touches mixing well with tart fruit and lactic tones. Earthy finish with rhubarb & acidic apple, old grassy hops, touch of vinegar. Medium body, slick-oily texture, fizzy carbonation. Crisp, refreshing, complex, a real treat.

375 ml green frosted corked & caged bottle, batch #01301, from Vinmonopolet, Nettbutikken. ABV is 8%. Hazy golden to orange colour, moderate white head. Aroma of brettanomyces / farmhouse and oak. Medium sour flavour, notes of brettanomyces, oak, oxidised cider and wine, lemons and white wine vinegar. Well balanced.

Bottle. Color: Very slightly hazy orangish golden, stable white head. Aroma: Tart, vinuous, fruity, berries, funk. Taste: Dry, over moderate tart , vinuous, fruity lemon, berries and some grapes. Funk notes. Light sweetness and bitterness. Old hop. Some white wine vinegar. Notes of minerals, tannins and wood. Quite smooth mouthfeel. Medium body, below average carbonation. Long lasting quite complex finish. Another nice monoblend. Farewell foeder 108... :)

Bottled, from Systembolaget. Clear deep golden, mid sized head. Funky nose with cobwebs, barnyard and old hay. Tart with medium body and well rounded, spritzy mouthfeel. Mildly citric with lots of funky barnyard. Balanced and very complex.

Sampled after a vertical tasting of some Boon VAT including the regular VAT 108. Almost clear golden under a nice, medium sized white head. Relatively lively carbonation. Aroma is distinct funky with citric fruit, apples and nice acidity. Tart and really refreshing. Interesting to see how much different just 10% fresh lambic does the reminding 90% old lambic. It’s definitively smoother, actually I almost find it too soft and smooth compared with the lovely regular VAT 108 version.

Vertical tasting of VAT 91, VAT 92, VAT 108 and VAT 110. VAT 91 – slightly unclear golden body under a small white head. Nice funky aroma with citric fruit, apple cider and ripe apple with cellar notes. Many elements from a classic Geuze but has the more distinct sweet and sour taste from a unblended Lambic. VAT 92 – Same appearance as VAT 91 and much of the same flavors, a bit more on the fresh apple than ripe, some more citric fruit and hint of bitter citric zest. At the same time the overall impressive is slightly milder and more balanced than 91. Still, I prefer the 91 that I find with slightly more distinct flavors. VAT 108 – Sama appearance as VAT 91 but more lively carbonation and foamier. Aroma as more distinct cellar notes, taste is more acidic and all in all this taste closer to a regular Geuze than the others. Fresher expression, more complexity and smoother with more balance. Very nice and tasty. VAT 110 – Slightly darker golden body than the rest. Less fruity and more wood flavor than the others. The wood feels almost a bit harsh in aftertaste, assume it’s actually notes from the Cognac that might emphasize the taste of wood. Nice enough, but compared with the others this is the less preferred version.

Cream-tinted, dense head; pale copper beer with fine pearling. Horseblanket, Brett& other wild yeasts. A bit of mild resin, saddlesoap. Very mild horseblanket & funky, dry leaves, fresh shoots and farmyard odours, all in perfect balance and complexity. Light, titillating MF, light acidburn. Mild, malse gueuze, top quality. Hazy blond colour with thin head. Aroma has a nice citric note. It's obviously Boon but with a very soft mouthfeel and fine carbonation. Woody complexity and suberbly dry. Texture, for a Geuze, is exceptionally smooth and full.
