Bière du Pays is inspired by the classic Saisons from the country. An airy and fluffy malt bill is fermented with wild Missouri yeast and bacteria and our house Saison blend. This refreshing and delicate farmhouse ale was aged in wine barrels for several months before it was naturally conditioned.

Blend 9, March 2020, draught at the brewery 12/26/22. Good clarity, peach-bronze-maize. Large white head slowly to ring. Lovely grains, light Brett and soft, but moderately strong oak. Low fruitiness but tons of plastery/waxy saison character with light black pepper. Hint of unripe peach skin on the end. Clean, no alcohol. Soft and wheaty, chewy and nicely attenuated with rounded, but prevalent oak. Lovely stone fruit and good but not strong acidity on the end. If you told me there was apricot in this I'd believe you, which is cool. I like how strong the saison character is. And the stone fruit. And the mild oak. Crazy that this is only 4%

CBJ tasting. Thanks to Wingman for the bottle. A light haze on this paleish gold beer, small off white head. Light palate, fairly dry, good fine minerally carbonation. Thin malts. Acetic fruits and tart dried fruits. Some ripe lemon. A fairly dry finish. Not my thing but I can drink it and don't hate it.

Bottle shared at the craft beer junction bermondsey tasting. Many thanks. A translucent golden orange coloured pour with a fine white head. Aroma is nice, mellow funk, airy peach, fuzzy peach, salt, light wheat. Flavour is composed of super sharp, tangy peach, fuzzy, nectarine.. Lovely funk. Palate is sharp, pricky, highish carbonation. Acid pinch.

On tap at the brewery. Hazy golden with white head. Funk, some herbal notes, fruity, peach, medium sourness. Nice sour saison.
