Rhubarb, the most elegant on vegetables, goes through a miraculous transformation during its fermentation into wine. The result is a palate full of rich Nordic acidity and plenty of minerality complemented by almost sauvignon'ish aromas. Bottle fermented for at least 6 months according to classic method.

TCBW2024. Hazy yellow colour, minor head. Aroma is rhubarb, some white wine like tones along with mild grapes and some slight fructose sweetness. Flavour is rhubarb, some white wine, mild grapes and some sugary sweetness to it.

2018 vintage. Pours unclear , pale yellow. Scent is rhubarb, fairly refined, yet very raw, natural, and strong . Taste is very spiced, rhubarb, but loads more flavor, even sweetness, rather than the sourness I expected. Way less dry than the Abavas Rhubarb Cider I had 2 days ago. Carbonation level is comparable to a nice champagne. Easy drinker with more than decent aroma's and textures.
