Barrel-aged Double Grisette
We brewed this beer with Dave Janssen of Hors Catégorie brewing, our oceanographer/beer historian/home-brewer soulmate with a deep love of all things saison. Idiosyncratic as we both are, this collab had to become a bit peculiar. And so it happened: we brewed a double grisette and fermented it with one of our favourite funky farmhouse blends. We installed an extra hop filter for the generous amounts of Saaz and our favourite house barrel did the rest. Water, water everywhere and only this funky, woody, fruity goodness to drink.
Ingredients/Ingredienten: Malt (Pils, unmalted wheat, malted wheat), hops (Perle, Saaz), Yeast (EL Ontario).

(Draught at Arendsnest, Amsterdam, 14 Feb 2024) Pale amber colour with frothy, off-white head. Fruity, spicy nose with notes of citrus, oak wood, yeast, apricots, pink grapefruit and sweaty socks. Fruity, tart taste with wood, citrus, vinegar, grapefruit, grapes and a mild herbal bitterness. More than medium body, quite dry. Funky and spicy, interesting and well made saison. Very nice.

75cl Fles, nieuwere batch, 7%. Troebel goudoranje kleur, witte kraag. Licht funky, licht zuur, eikenhout, vanille, hint van kokos, honing, zacht moutig, Brett, hout, verbena, citrusschil, degelijk bitter. Lichte tot medium body. Heerlijk.

Tap at Arendsnest, Amsterdam, 21st March 24. Sat by the canal, it’s dry but not that warm. Pours of clear orange. Aroma is tart, funky, barrel. Taste is fruity, funky, refreshing, really nice

Bottle shared. Bit hazy dark golden. Yoghurt, strong white wine, gooseberries, grassy hops, soft citrus, oak, wheat, doughy. Medium sweet, a bit more bitter and light sour. Over medium bodied.

On tap at Proeflokaal Arendsnest, pours a clear copper amber with a small white head. Aroma is loaded with wood, rustic saison yeast, and some earthy notes. Flavour is full of wood, with woody notes, rustic saison yeast, and a touch of oak. Very woody. Very good.

Bottle shared. Hazy pale yellow color, white head. Smell and taste are dominated by the herbal notes, lightly citrus and somewhat bitter, herbal bitter. Alright.

Bottle. Color: Slightly hazy golden, white head. Aroma: Sweetish, malty, Saison yeast, fruity vinuous nates. Taste: Over medium sweet, malt, wheat, herbal Saison yeast notes, wood, white wine notes. Fruity notes of grape and citrus hints. Tannins. Dry-ish mouthfeel. Clearly present yet subtle funk. Lightly tart, moderate bitterness, going to over moderate at finish. Nice, refreshing and pretty complex, BA 'Double' Grisette.
