The intro to our 10th Anniversary rewind - and perhaps one of our most formative brews - is a botanical saison dubbed “of Love & Regret”. The first batch was produced in the small town of Beerzel, Belgium in 2010.
Meant to evoke the delicate aromas of Spring, this beer was a tribute to the changing nature of the seasons, during what was a rather
transformative season in Brian’s own life. This was the first beer we crafted overseas - the experience of which would shape the model we would follow for years to come - eventually leading to the production of Stillwater beers & collaborations in over 30 countries.
Soft malts, herbaceous hops, & fragrant botanicals come together in an elegant ode to the bittersweet passage of time.

At ACBF 2011. Cloudy orange gold colour. Medicinal aroma. Smells of bleach. Nasty, not right, herby, medicinal.

11.2 oz. bottle. Pours a dark gold with a large khaki head. The aroma is heavy citrus, cut grass, banana esters, and a little dough and funk. The flavor is sweet and a little tart up front, mellow bitterness and spiciness in the middle, and a mild bitter finish. The palate is light, crisp and effervescent. Overall, a very interesting beer, with lots of layers. Easy to drink, and yet complex.

Bottle. Golden-orange colour with an off-white head. Aroma is fruit, malt, herbs. Flavour is fruit, herbs, malt, hop, citrus, spices. Medium to full body. Nice beer.

Super herbal and spicy, for damn sure. The pour is fair, the beer coming out a decent gold, but lacking a solid Saison head. The herbs come through on the nose with great vigor, almost overwhelmingly so at first. The subtle wheat notes of a Saison are there, but lie underneath a pile of sweet-n-tangy-smelling herbs. The flavor is somewhat soapy, with a lot of lavender coming through in the middle and on the finish. The herbs eventually grow to define the brew, but I’m not sure how great of a feature this may be. Not bad, but very prickly and like a trip through the herb garden. But your belches will go well with Wheat Thins.

Bottle (Vol. 1). Pours with a hazed (slightly) peach hued body with a small, off-white head on top. Aromas are estery, stone fruit, fruity aromatics, wheat, vanilla and a lightly spicy note (hops?). Flavors are fruity, dry, vanilla, chamomile, esters, light plastic. Wheat and peppery. Lively bubbles. Dry.

Bottle @ Ulfborg Easter Tasting, 2011. Pours hazy orange with a large creamy white head. Nose is yeast and spices. A bit of pepper and grassy notes. Herbal hoppy. Medium and smooth body.
