An everyday drinking beer, borne out of a Wildly different concept
An everyday drinking beer, borne out of a Wildly different concept. Using our own version of a Solera aging system (most commonly associated with Sherry, Madeira, Port and other fortified wines), we’re creating a unique blended beer.
Although this Saison has had the same love and affection found in our most sought after barrel-aged beers, it has the simplicity and drinkability of a more sessionable beer.
Blending a young crisp beer and barrel-aged beer gives a long, distinct, authentic Wild Beer Co finish. This is a rustic spicy Saison with a barrel-aged aspect, funky yeast complexity, crisp yet round grainy fullness from local spelt and a European resinous hop character.

Bottle. A murky dark golden beer topped by a bit, off-white head leaving lacings. The aroma is quite fruity and citrusy. Citrus peel mostly, with some pale malts. A touch of booze in the far back. The flavor is a tad too sweet, with citrusy fruityness and some malts and saison yeast. Medium body and a soft carbonation. Short finish with pale malts, canned peaches and some yeast. Nothing impressive going on here. Could perhaps need even more time in the bottle. 140815

Bottle at home, from ABM, 07/06/14. Pours lightly hazed golden orange with a pretty fucking good time off white head of bubblebath. Nose is bitter orange, straw, light white pepper strains, lemon peel. Taste comprises bitter citric rinds, grassy, light spice, woody tinge, yeast esters, peach and apricot yoghurt. Medium bodied, fine carbonation, semi drying close laced with grassy bitter tones. Decent easy drinking saison light from the Somerset saison machine.
