An everyday drinking beer, borne out of a Wildly different concept
An everyday drinking beer, borne out of a Wildly different concept. Using our own version of a Solera aging system (most commonly associated with Sherry, Madeira, Port and other fortified wines), we’re creating a unique blended beer.
Although this Saison has had the same love and affection found in our most sought after barrel-aged beers, it has the simplicity and drinkability of a more sessionable beer.
Blending a young crisp beer and barrel-aged beer gives a long, distinct, authentic Wild Beer Co finish. This is a rustic spicy Saison with a barrel-aged aspect, funky yeast complexity, crisp yet round grainy fullness from local spelt and a European resinous hop character.

Aroma of fruits, yeast, barnyard funk, woody notes. Flavour is light sweet and moderate sour. Finish is rather dry. Lovely slightly complex Saison.

Bottled (Spontaneous KSMT tasting). Amber colour, mediumsized creamy slightly off-white head. Aroma is citrus, some mild funky notes, sour wood and some mild earthy notes. Flavour is citrus, some yeast, mild sour wood as well as some slight crisp maltiness to it. Nicely dry palate. Balanced and refreshing.

33 cl bottle. Piurs clear and golden orange with a huge white head. Aroma is fruity, phenolic and light estery. Smooth fruity, wineous. Sweet and toasted, light bitter. Smooth fruity finish.

Bottle from Cocktails, Littleborough. Cloudy amber-brown with a thin head. Slightly soured in both its aroma and taste with a light fruity character.

1/3 flight sample@Hack & Hop, London - fuzzy yellow coloured pour with a white head. Aroma and taste is medium sweet floral and fruity, some barnyard light spicy yeasts, zesty lemon citrus, some more grassy and floral nuances, light palate, medium carbonation, light dry finish.

Tap @ Kafe Belgie, medium sample. Hazy orange color, short frothy head. Aroma of sweet n sour, orange, bit spicy, slight oak wood, fruity, slight lactic. Bit flemish red, but with more citrus and orange fruitiness. Slight sour and soft fruity sweetness in taste. Very easy drinker. Wonderful stuff.

Bottle thanks to allmyvinyl. Appearance - amber with a decent head. Nose - lemon zest, pineapple and a touch of spice, perhaps white pepper. Taste - pineapple and lemon zest again. Again spice. Palate - close to medium bodied with a creamy yet tangy texture and a long dry finish. Overall - it’s saison by numbers. Everything you’d expect and nothing more. Could have been brewed by Dupont.

Bouteille 33cl @ Il Pretesto, Bologna. Orangée, col fin blanc. Arôme au bouquet boisé de chêne qui est bien accompagné par le côté rustique de saison belge, le tout sur un rétro alliant funk et aigrelet. Palais est léger, rustique au niveau des levures mais avec cet ajout funk-wild. Le tout garde un léger fruité citronné voire orangé pour une amertume de fin originale et qui penche vers le suret.
