Back in 2020, a long distance collaboration between two masters of dark beers, De Molen & Boatrocker, saw the release of a beer that won people’s hearts. Fast forward to 2022, the original idea has been realised…A bourbon barrel aged version of Windmills & Weathervanes…To the mash, we added freshly toasted and charred old bourbon barrel staves, then over 10kg of Ancho, Pasilla, and Morita chillies were added to the beer, along with 10kg of cacao nibs, 40 vanilla beans and 45 cinnamon quills…and then more than 12 months in 1st use bourbon barrels from Heaven Hill and Buffalo Trace…the result is a balanced molé-ish imperial stout-ish.

Sampled @ Borefts Bier Festival 2022. A very dark brown beer. Aroma of intense sweet dark malt, bourbon and vanilla. Taste of sweet dark chocolate malt, vanilla, bourbon. Boozy. Nice.

Clear black beer, small creamy to aery beige head, unstable, little adhesive. Aroma: lots of sweet caramel, vanilla notes, alcohol, sugary impression, chocolate notes, malty, whisky, lovely smell! MF: ok carbon, medium body. Taste: sweet, quite some alcohol noticeable, sugary, chocolate, a nice roast as well, a bit oxidized, some dried fruits, bitter touch. Aftertaste: alcohol burning the throat a bit, some coffee notes, very decent beer!

Cremiger, stark malziger Beginn. Würzig, minimale Herbe, etwas rauchig. Alkoholisch malziger Mittelteil und Abgang, langer Nachgeschmack. 10/12/12/12//12

Tap. Darkest brown color with beige head. Aroma is bourbon barrel, chocolate, not too intense. Taste is mild cinnamon, chocolate, again caramel fudge from the Bourbon, mild cinnamon again in the back. Velvety mouthfeel, super smooth carbonation. Good one, extremely balanced.

Lovely thick and rich molé stout. Great body for the ABV. Lightly roasty, some soft chilli warmth with a light smokyness, and a nice amount of cacao. Excellent barrel ageing, nicely balanced amount of soft bourbon.

From a 440ml can on 14/6/2022. Pours a deep deep brown with very little in the way of head. The nose is distinct with lots of dark fruit, red wine, chocolate, spice and a touch of booze. The taste is complex, with lots going on - dark chocolate, light roasted malt, more dark fruit with vinous notes. Just a touch of chilli at the back of a sharpish finish with some warming bourbon. The palate is slick, the carbonation average. Both restrained and interesting. A nicely put together big sipper.

Can. Very black with a small brown head that lingers at the rim. Aroma of roast malt,dark brown sugar, vanilla. The chiles are there if you know they are. Clearer upon a sip, although it's the cinnamon and oak that show mostly clearly. Only medium bodied and moderately sweet with gentle rumbling chiles and spices, Bourbon and lots of oak.
