1, 2 and 3 year old lambic with 3 varieties of raspberries, apricot pits, and Madagascar and Tahitian vanilla beans. In this particular blend the addition of apricot pits and vanilla balances out the high natural acidity of the raspberries used in the raspberry lambic. The balanced acidity of the beer makes for the three varietals of raspberries to shine in their specific character. The spicy onset with a hint of almonds translates into a round mouthfeel with a smooth finish.

LCI. Excellent, raspberry dominant, but lots of apricot character. Barrel and vanilla provide roundness, elegance, some funk. Lots of sourness. Noyaux=Royaux. Thanks Bo (for the bottle, not the photo-bomb)

750mL bottle, pours a cloudy dark rusted red with a small white head. Aroma has plenty of raspberries and apricots, with a touch of the vanilla, and moderate funk. Flavour is quite acidic but definitely complex, with tons of raspberries, a bit of apricot, and moderate-to-high acidity. Complex for sure but maybe a bit too acidic. Excellent nevertheless.
