Mexican hot chocolate imperial stout.

Molinillo was created by brewing an Imperial Stout base full of Marris Otter, Vienna, and chocolate malts. We then added cacao nibs from our friends at @eastvanroasters, Piloncillo sugar and a dash of Ceylon cinnamon post fermentation.

Whisk that all together and you get a rich and delicious 10% Imperial Stout reminiscent of the Mexican Hot Chocolate our Head Brewer @awkward.eric enjoyed growing up.

The name Molinillo comes from the traditional whisk used in Latin America to make hot beverages such as Mexican hot chocolate.
We have one of these whisks at the brewery and Eric actually made us hot chocolate with it on brew day. But I forgot to include it in these photos… twice.

355 ml can. Pours black with moderate tan head. Aromas of soy sauce, cocoa powders, roasted peppers and dusty roasted malts. Flavors of dull vanilla, paper, dry dark chocolate, some cinnamon, and roasted malts. The flavor seem flat and not well integrated, not following through on the aromas as expected. OK overall but just not pulling it’s weight for the ingredients.

Poured from 355mL can. Dark brown with minimal beige head. Roast malt, light cacao, slightly bready, mild spices, a bit thin. Decent.

Well, it poured with a thick black body and thin dark brown head. The aroma has some chocolate, maybe cinnamon, and definitely a dash of dark sugar (the piloncillo). Medium body - certainly not as thick as you'd expect this type of beer to be, but the body seems in line with everything else, as in more of a lighter touch and balance. Roast malt, dark sugar, and sticky molasses are all in there. The cinnamon is something you mostly feel, and mainly in the finish. The finish is a bit light, even for taking a more quaffable interpretation, and there's a slight fruitiness there as well. It's okay - I always like these things thicker than Turkish coffee, and this isn't so that is something of a let down, but I drink old rums that are relatively light bodied with rich dark sugar notes, so I am familiar with the concept. The analogy I would use is that this is like drinking Havana Club 7 when you wanted Havana Club 15. Obviously, it's not the same, and you'll be disappointed, but the 7 is a solid product in its own right. So's this.

Dark brown colour, not black. Random roasted malts, it has a good bread base, hints of chocolate and spices (appreciated that the spices are not dominating), some alcohol; it's smooth, but on the thin side. Good, but it lacks the depth and complexity that I would expect.

Muddy brown with bad foam, soft dry chocolate on the nose, maybe some biscuit but nothing else. Flavour is smooth chocolate, vague coffee. A little wet but that's quite impressive for ten percent. Still, nothing too exciting here.

12oz shared with Alex @ home. Appearance: dark brown with a beige head. Aroma: very weird with fresh sweet flowers notes. Taste: along the same lines with very roasty and coffee aftertaste. quite harsh. Overall: meh.

355mL can, pours black with a small tan head. Nose is full of cinnamon upfront, followed by cola, a little soy, and a touch of roast. Flavour is full of cola notes upfront, with moderate cinnamon, and some soy sauce. Not really getting any cocoa. Sweet, sticky and cola-like on the palate. This is not really on the mark. Needs lots of work.
