Dry, tannic, and of course wood-aged. This delightful cider is a true drink from the Somerset Terroir and we simply can't wait for you to try it!
As a Somerset brewery that brews and talks about the terroir all the time, we have been asked many times if or when we would make a cider. The uniqueness of 2020, a random conversation and a beautiful liquid led to this project!
This foudre-aged, blended, cider has spent 2 years ageing in new first-fill Seguin Moreaux oak; one foudre, full of Chisel Jersey the other, holding several Somerset varieties. Blended together they make a bold yet nuanced combination of flavours; tannic apple, oak and white grape with a moreish dry finish. Lightly sparkling and fully fermented out, it’s strength is well hidden.

75cl bottle SophiesBeerStore.co.uk. Misty gold with awild orchard nose. Interesting barrel nuances encompassing white wine, creamy aged cheese, almond, vanilla with crisp wild notes. Good dry cider character overall. More apple fruit would be welcome in further editions.

750ml bottle - Pours a clear golden colour with a small frothy white head that quickly disappeared. Aroma is apples with some woody notes. A moderately sweet and tart taste, dry in the mouth, sweet and tart apple flavours, woody tannins and a dry oak finish.

1/9/2020. Sample courtesy of danlo, cheers Ed! Pours clear pale gold with minimal head. Aroma is woody, appley, vanilla, sweet caramel, touch funky. Moderate sweetness and tartness. Quite light bodied, average carbonation. Drying, tart and lingering sweet finish. Enjoyable.

750ml bottle from Wild Beer. Golden colour, white foam head that dissipates to a thin rim and aroma of apple, oaky. Taste is fruity apple, fleshy, tart with spicy oak barrel, vanilla and mellow tannins. Medium bodied, light carbonation, dry oaky finish. Quite drinkable.
