400L of barrel aged mixed fermentation saison re fermented with 200L of Organic Golden Delicious apple juice.

Our family have been making cider for over 30 years & its influence is found in everything we do - right down to the cider lees we use to ferment our beers. Because of this, we've always toed the line between cider & beer. We decided it was about time we make an official blend, known as a Graf, using locally grown, organic Golden Delicious apples and a barrel of our 5 month barrel aged organic saison. The apples were pressed & the juice added to a blending tank with the saison. With the fresh yeast & sugars from the juice, the blend was left to referment for an additional 4 months leaving us with a suitably dry, tart & refreshing saison/cider blend. Perfect for long, hot summer days.

75cl bottle from Hoptimism. Appearance - golden and a little flatter in carbonation than expected, no head. Nose - apples, a light yeastiness but not obvious it's saison. Taste - apples and basically it tastes like cider. Less of a hint of any saison yeast than on the nose. Palate - light bodied, low carbonation, tart finish. Overall - ok but just tastes like cider.

17th Aug 2020, monthly beer share in Chez Sophie, Shrewsbury (just four of us on this one). Cheers Mat for the 750ml bottle of this; BB Jun 2025. Misty amber body, wispy white head. Sour apples all the way, not my thing.

75cl bottle @ monthly tasting, Chez Sophie, August 2020. Brought by me. Lightly misty copper appearance, thin white head. Distant sour apple aroma. Taste presents a nice wild sour edge, acetic with complex wild character, distant balsamic.. not much of the original saison remaining, but no bad thing. Expected a little more apple to shine through the jagged wild elements, but a very pleasant sipper overall. Nice that the contents stayed in the bottle on opening this time.

Bottle. Beer Central, Sheffield. Light copper colour. No head. The last LEP Beer was supposedly the last I bought. But then this sounded really good, so I bought one. It’s like thin, vinegary cardboard juice. Lesson learned.
